Blackberry Cobbler

- 2 ½ cups fresh blackberries
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 tbsp brown sugar (to sprinkle on top for topping)
- 1 cup all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 stick butter (melted)
- 1 cup milk
Instructions
- Spray a 9 x 9 pan with non-stick spray.
- Preheat your oven to 350 degrees.
- In a medium sized mixing bowl, pour in 1/2 cup granulated.
- Mix in ½ cup brown sugar.
- Stir in 1 cup all-purpose flour.
- Mix in 2 tsp. baking powder.
- Add in ½ tsp. salt
- Mix dry ingredients.
- Pour in 1 cup milk and stir.
- Melt 1 stick of butter in a microwave safe dish.
- Pour in melted butter and stir until combined.
- Pour the batter into the greased 9 x 9 pan.
- Pour 2 ½-3 cups of blackberries over the top.
- Sprinkle 2 or more tablespoons of brown sugar over the top.
- Bake for 40-50 minutes until the center is set.
- Cool for 10 minutes and serve.

I am obsessed with making this easy blackberry cobbler made with flour and milk every summer when my blackberries are in. This recipe is different than most, because I use a mixture of brown and white sugar. I created this recipe out of necessity because I was out of granulated sugar. Out of the necessity of having to make this homemade dessert (since I was craving it) I was forced to use my resources and brown sugar saved the day. I love my other recipe as well, but this one made the final cut. I couldn’t leave out my other favorite ways to enjoy these blackberries so I created a printable for my subscribers.

Simple Steps to Make This Easy Blackberry Cobbler Made with Flour and Milk Recipe
- Spray a 9 x 9 pan with non-stick spray.
- Preheat your oven to 350 degrees.
- In a medium sized mixing bowl, mix together: 1/2 cup granulated sugar, 1/2 cup brown sugar, 1 cup all-purpose flour, 2 tsp. baking powder, and 1/2 tsp. salt.
- Stir in one cup milk.
- Melt 1 stick of butter in a microwave safe dish and then pour and stir into the mixture.
- Pour this mixture into the pan.
- Pour 2 & ½ cups of fresh blackberries on top. Do NOT mix in.
- Take 2 tablespoons of brown sugar and sprinkle over the top. You are just lightly covering the top. You can add more if you need more to cover it.
- Bake for 40-50 minutes until the center is set.
- Cool for 10 minutes and then serve by itself or with ice cream.
Can I make it ahead of time?
It tastes really delicious the next day as well. However, if you want to serve it somewhat warm, then I would recommend only making it about an hour before you want to serve it.
Can you double the recipe?
Yes! To double it, use 5 cups of blackberries, 1 cup of granulated sugar, 1 cup of brown sugar, 2 cups of all-purpose flour, 4 teaspoons of baking powder, 1 tsp. Salt, 2 sticks of butter, and 2 cups of milk. Bake this in a greased 9 x 13 pan for 40-50 minutes in a preheated 350 degree oven.

Cover it with foil and leave it out of the counter. I have to be honest, I don’t know how long it is good for because we may only have one piece left over and it never makes it past the next day.
Tips
Make sure to sprinkle the brown sugar on the top before you bake it.
Serve with ice cream.
You can add a few extra berries before baking if you think it looks like it could use a few more.
Can I substitute another type of berry for this recipe?
You can use blueberries and raspberries as well. I haven’t tried it with strawberries or rhubarb, but now I am curious, so I will probably give it a try.
