I know! That is quite the title there, but this easy oven baked one pan brats, peppers, and onion dinner recipe, oh, and also potatoes, is so easy and delicious! You will definitely be going back for seconds.
You simply cut up the peppers, onions, potatoes, and brats. Spread them out on a large pan. Then, you drizzle olive oil over the veggies and season everything with salt and pepper and whatever else you think would taste good. Baked them in the oven that has been preheated to 375 degrees for 45-55 minutes and you are good to go!
I absolutely love that everything goes on the same pan. The prep time and clean up time is quick and simple.
What Does It Taste Like?
The brats have a flavorful inside and the outside gets a little brown and crispy, giving it a great texture. The veggies are tender and full of fresh flavor this time of year.
What can I serve with this easy oven baked one pan brats, peppers, and onion dinner recipe?
You don’t really need to serve anything with it. That is the glory of this one pan dinner. You have your starch, veggie, and meat all in one place. I like to offer brat buns and of course some ketchup and mustard to go with it. However, if you really want additional food items to go with it, a salad or corn on the cob would taste delicious and be a great side.
Why you will love this easy oven baked one pan brats, peppers, and onion dinner recipe
Oh my goodness, you will love this because it is full of flavor and it is sooo easy to make this! You can have this in the oven in ten minutes, let the oven do the work, and then you go get other things done during that next 45-55 minute time frame.
Can I make it ahead of time?
This dinner reheats up really nicely. Say you get home from work and you only have an hour before you have to run out again, you can get it done. Quickly cut everything up, season, and pop it in the oven. You could even turn the oven temperature up a little bit to cook this dish a little faster. When you get back home later that evening, just heat it back up and it will still taste delicious. Tip: Cut up the veggies the night before or before you go to work so you can just cut up the brats, season, and bake when you are ready.
Can you cut the recipe in half?
If you are just serving two, you could definitely cut this recipe in half. Just use one package of brats, one to two peppers, one half or one onion, and a couple of potatoes and that should do it.

How to make easy oven baked one pan brats, peppers, and onion dinner recipe
Preheat the oven to 375 degrees.
Cut up 1 large onion and put it on the pan. Slices are fine.
Slice 3 colorful bell peppers and put them next to the onions on the pan. The order doesn’t matter. They can even go right on top.
Cut up 4-5 potatoes into smaller sized pieces and put them next to the veggies on the pan. About one by one inch makes for a good size. I cut them into round slices and then cut them into fourths.
Cut the uncooked brats into pieces and put them next to the veggies or potatoes on the pan.
Drizzle the veggies and potatoes with olive oil. Just enough to coat everything.
Season everything well with salt and pepper. You can add your choice season here as well.
I like to toss/mix around the veggies and potatoes so that they are coated well with the olive oil and seasoning.
Bake for 45-55 minutes. I like the brats to have a darkened and crispy outside.
Serve and enjoy!
Go back for seconds.
Leftovers
You can store the leftovers in a container with a lid and put them in the fridge. They will be good in there for a couple of days. This dish heats up really nicely so you can enjoy this meal a second time if you have leftovers.
Can I use other veggies for this recipe?
Yes! Use what you have, what is fresh in your area, and what is on sale. You can experiment with this recipe. Zucchini and asparagus would be really good with this too.
Tips
Make sure the brats are darkened and have a crispy outside. You can keep the pan in the oven a little longer if you need to.
You can cut up the veggies ahead of time if you are looking for a way to speed this recipe up even more.
