5 from 2 votes
I know! That is quite the title there, but this easy oven baked one pan brats, peppers, and onion dinner recipe, oh, and also potatoes, is so easy and delicious! You will definitely be going back for seconds. The brats have a flavorful inside and the outside gets a little brown and crispy, giving it a great texture. The veggies are tender and full of fresh flavor this time of year.

  3. Slice 3 colorful bell peppers and put them next to the onions on the pan. The order doesn’t matter. They can even go right on top.

  6. Drizzle the veggies and potatoes with olive oil. Just enough to coat everything.
  7. Season everything well with salt and pepper. You can add your choice seasoning here as well.
  8. I like to toss/mix around the veggies and potatoes so that they are coated well with the olive oil and seasoning.
  9. Bake for 45-55 minutes. The brats should be cooked through and have a darker and crispy outside.

Notes

Make sure the brats are darkened and have a crispy outside. You can keep the pan in the oven a little longer if you need to.
You can cut up the veggies ahead of time if you are looking for a way to speed this recipe up even more.
