A shortcake is really a thicker biscuit that has a touch of sweetness, however, we are using angel food cake to replace the shortcake for this recipe. We are going to go over three of the four ways to serve up this delicious blackberry and angel food cake combination.
To make this fresh dessert all you need is angel food cake or mini cakes, cool whip or whipped cream, and berries. We have a blackberry patch and are picking berries daily this time of year. They start ripening right around the fourth of July and they are so good. We added another row this year and surprisingly, those little starts produced berries in their first season. We were very excited and surprised to see those little babies producing already.

We are going to talk about making this dessert using the store bought mini dessert shells, store bought already made angel food cake, and a Betty Crocker boxed mix. The fourth option is to make the angel food cake from scratch. We are not digging into that today, but that is definitely an option.
What are dessert shells?
The mini dessert shells are adorable little individual cakes. They can be found near the strawberries at your local grocery store. I was able to buy six of them for $1.99 at our local JayC. They were right beside the strawberries in the produce section. They taste sweet and have a spongier cake-like texture. The tops of them make almost a bowl-like shape so they hold whatever you top them with. They are sooo cute and fun!
Store bought angel food cake
This store bought angel food cake makes for a quick and yummy option as well. It is light and fluffy and has a sweet flavor that isn’t overpowering. You can also find this near the strawberries or in the deli section near the fresh baked goods. The one that I bought for this recipe was right around $6.50 and would serve 4-6 people. They are much smaller than a semi-homemade angel food cake that you make with a box, but it still might be all that you need depending on how many people you are going to serve.
Angel Food Cake Mix
The box of angel food cake mix can be found in the baking aisle. The angel food cake will be found near the cakes. The one that I purchased cost around $4.37 and was the Betty Crocker brand. To make this, all I had to do was mix in water. Water! You can do this. I used my handheld mixer to make sure it reached the correct consistency. I followed the directions exactly and it turned out great. It was almost, if not totally, double the size of the store bought one. It was very light and fluffy and took around 39 minutes to bake in my oven. I did NOT grease my angel food cake pan and baked it on the lowest rack, which was at the lowest level. Just follow the directions. I always set the timer anywhere from 5-10 minutes lower than the time says on the directions and then watch it from there.
What kinds of berries can I serve with angel food cake?
All berries are delicious with this. You can serve whatever looks good and fresh to you at the time. Strawberries, raspberries, and blackberries are all great options. If you would like, you can mix the berries and serve them as a delicious combination.

Do I need to have an angel food cake pan?
If you want to make a homemade angel food cake or an angel food cake using a boxed mix that has a circular shape with the hole in the middle, then, yes. However, there is an option on the box to make it in a loaf pan.
What is an angel food cake pan?
It is a pretty cool pan and is made specifically for angel food cake. It has little legs that stick out of it because when the cake is done, you will take it out of the oven, flip it over onto those little legs, and let it cool. Once it is totally cool, you flip it over, loosen the outside by running a butter knife around it and loosen the middle that is around the center the same way. You flip it over and the removable inside section of the cake pan comes out with the cake. The pan is made to come apart so you can remove the cake without ripping it to pieces. Use the butter knife to cut away the top of the cake from the cake pan, and you are good to go.

Serving this on a cake stand or beautiful serving dish can really add some beauty to a pretty simple dessert. Making homemade whipped cream can be fun and is so delicious. I recommend serving it with any of the angel food cake options. You just need heavy whipping cream, powdered sugar, and vanilla to mix up my yummy and sweet homemade whipped cream.

How to cool angel food cake
If you are buying the already made store bought one, you don’t need to worry about this. When you make an angel food cake, it has to cool all the way down before removing it from the angel food cake pan. There are little legs on the pan that allow for you to flip it over and let it cool. It basically cools upside down, which is pretty neat. Wait until it is completely cool before you remove it from the angel food cake pan. You want to make sure it doesn’t rip apart when you take it out of the pan.
Storage or leftovers
The mini dessert cups can be stored in a gallon sized bag. Keep the container for the store bought angel food cake and put the cake back into it for storing. If you make the angel food cake using the mix, wrap it in saran wrap and that will keep it from drying out.
