Ingredients
  

  • 2 large Granny Smith Apples (peeled, cored, and thinly sliced)
  • ½ cup butter (split in half)
  • 1/2 cup heavy whipping cream
  • 1 cup milk
  • 6 large eggs
  • ½ cup powdered sugar
  • 1 cup all purpose flour
  • 2 tsp salt
  • 1/8 tsp nutmeg
  • ¼ tsp vanilla extract
  • cup sugar
  • 2 tsp ground cinnamon

Instructions
 

  • Preheat your oven to 400 degrees.

Prepare the apples:

  • Peel, core, and thinly slice two Granny Smith apples.
  • Toss the slices with the cinnamon and sugar mixture to coat them evenly. Set aside. Mixture: ⅔ cups sugar and 2 teaspoons ground cinnamon. You can just eat this apple mixture by itself.

Make the batter:

  • In a medium bowl, beat 6 large eggs until well combined. If you use a mixer, beat on low to medium speed.
  • Stir in 1 cup milk and 1/4 tsp. vanilla.
  • Pour in ½ cup heavy whipping cream.
  • Add in 1 cup flour.
  • Pour in ½ cup powdered sugar (confectioners sugar).
  • Stir in 2 teaspoons of salt.
  • Add in ⅛ teaspoon nutmeg.

Cook the Apples:

  • On the stove top, heat 4 tablespoons of butter in your non-stick oven-safe skillet over medium heat.
  • Add in the apple slices and let them cook for about 6-8 minutes. They will turn a nice golden brown and smell amazing. Sprinkle them with cinnamon and sugar.

Cook the Pancake:

  • Pour ½ of the batter over the cooked apples.
  • Place the skillet directly into the oven and bake for 18 minutes.
  • Watch the magic happen! The sides will puff up and the center will become set.
  • Repeat the process with 4 more tablespoons of butter and the remaining ½ of the batter.

Serve:

  • Remove from the oven and carefully turn the skillet over and transfer the pancake onto a large plate.
  • Sprinkle a cinnamon and sugar mixture on top. You can use superfine sugar if you would like.
  • Dust with powdered sugar.
  • Add just a little bit of nutmeg to the top. (optional)

    Overall the recipe tasted pretty close to Walker Brothers Apple pancake so thank you for sharing. However there was way too much salt… I’ve never seen a recipe that calls for that much salt. In addition, nowhere in the directions it said to add vanilla. I assume it was in the batter. Additionally the ingredients list left out milk even though that was in the directions. You may want to fix those errors.

    1. Thank you for your feedback and trying out the recipe! I am so glad you let me know about adding the milk to the ingredient list. It is updated now. I totally agree about there being a lot of salt. I think you could even cut it back to 1 tsp. and still get good results. Vanilla is optional, but I think it is always a good addition. You could even add a little more than 1/4 a teaspoon if you would like.
