Richard Walker's Apple Pancake | Copycat Recipe!

The sweet smell of Richard Walker’s apple pancake will fill your kitchen as you make this copycat recipe. Picture caramelized apples topped with a fluffy, oven-baked pancake. Time to bake!

Ingredients
  

  • 2 large Granny Smith Apples (peeled, cored, and thinly sliced)
  • ½ cup butter (split in half)
  • 1/2 cup heavy whipping cream
  • 1 cup milk
  • 6 large eggs
  • ½ cup powdered sugar
  • 1 cup all purpose flour
  • 2 tsp salt
  • 1/8 tsp nutmeg
  • ¼ tsp vanilla extract
  • cup sugar
  • 2 tsp ground cinnamon

Method
 

  1. Preheat your oven to 400 degrees.
Prepare the apples:
  1. Peel, core, and thinly slice two Granny Smith apples.
  2. Toss the slices with the cinnamon and sugar mixture to coat them evenly. Set aside. Mixture: ⅔ cups sugar and 2 teaspoons ground cinnamon. You can just eat this apple mixture by itself.
Make the batter:
  1. In a medium bowl, beat 6 large eggs until well combined. If you use a mixer, beat on low to medium speed.
  2. Stir in 1 cup milk and 1/4 tsp. vanilla.
  3. Pour in ½ cup heavy whipping cream.
  4. Add in 1 cup flour.
  5. Pour in ½ cup powdered sugar (confectioners sugar).
  6. Stir in 2 teaspoons of salt.
  7. Add in ⅛ teaspoon nutmeg.
Cook the Apples:
  1. On the stove top, heat 4 tablespoons of butter in your non-stick oven-safe skillet over medium heat.
  2. Add in the apple slices and let them cook for about 6-8 minutes. They will turn a nice golden brown and smell amazing. Sprinkle them with cinnamon and sugar.
Cook the Pancake:
  1. Pour ½ of the batter over the cooked apples.
  2. Place the skillet directly into the oven and bake for 18 minutes.
  3. Watch the magic happen! The sides will puff up and the center will become set.
  4. Repeat the process with 4 more tablespoons of butter and the remaining ½ of the batter.
Serve:
  1. Remove from the oven and carefully turn the skillet over and transfer the pancake onto a large plate.
  2. Sprinkle a cinnamon and sugar mixture on top. You can use superfine sugar if you would like.
  3. Dust with powdered sugar.
  4. Add just a little bit of nutmeg to the top. (optional)
