Steps: How to Make Copycat Cracker Barrel Blueberry Pancakes
Choose a medium bowl or large mixing bowl to mix your ingredients in.

- Combine the following dry ingredients.
- 1 ½ cups all-purpose flour
- 1 tbsp. granulated white sugar
- ¼ tsp. salt
- 3 ½ tsp. Baking powder
- Use a whisk or a spoon to mix all the ingredients together until they are evenly distributed. Make sure there are no clumps of flour or sugar.
- Add the following wet ingredients to the dry ingredients.
- 1 egg
- 2 cups buttermilk
- 3 tbsp. melted butter
5. Give it a good stir to ensure a smooth, lump-free batter.
6. Mix until all the dry and wet ingredients are combined.
7. Heat the electric griddle over medium heat (300 degrees). Some like to turn it to medium-high heat, but medium works perfectly with my griddle. You want to have a hot griddle covered with butter to get those crispy edges and buttery pancakes.
8. Spread butter over the top of the griddle or spray with a non-stick cooking spray. The butter helps them to get the crispy edges.
9. Pour 1/2 cup to one cup batter on the griddle.
10. Blueberries: Add in 5-10 fresh blueberries per pancake depending on your personal preference. Make sure they are not touching when you drop them into the cooking pancake so that the batter will be able to completely cook around them.
11. Heat until bubbles are formed.
12. Once you can see several bubbles, they are ready to flip.
13. Flip the pancakes over and cook for about one more minute. They will be golden brown.
14. Take them off the griddle and serve warm.

However, if you take a cup of milk, add in 1 teaspoon for vinegar, and let it set for five minutes you can use this as a buttermilk substitute. Some of my favorite toppings include berries, syrup preserves, homemade whipped cream and honey. Cracker Barrel also sells their Cracker Barrel Pancake Mix at their restaurant. If you aren’t ready to make everything from scratch, you could buy their mix and add in fresh blueberries all from the comfort of your own home.
