Cracker Barrel Inspired Blueberry Pancakes

I can not wait to show you how to make my version of Cracker Barrel’s famous pancake recipe at home! If you have been craving these delicious buttermilk pancakes look no further. With simple ingredients and easy steps, you can recreate the fluffy, mouth-watering pancakes that have become a breakfast classic. I am a huge fan of Cracker Barrel. This easy recipe will have you making their delicious pancakes in no time!

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 tbsp granulated white sugar
  • ¼ tsp salt
  • 3 ½ tsp baking powder
Wet Ingredients
  • 1 egg
  • 2 cups buttermilk
  • 3 tbsp melted butter
Add Ins
  • 1 cup fresh blueberries (5-10 per pancake)

Equipment

  • electric griddle or non-stick skillet

Method
 

  1. Choose a medium bowl or large mixing bowl to mix your ingredients in.
  2. Combine the dry ingredients.
  3. Use a whisk or a spoon to mix all the ingredients together until they are evenly distributed. Make sure there are no clumps of flour or sugar.
  4. Add the wet ingredients to the dry ingredients.

  5. Give it a good stir to ensure a smooth, lump-free batter. Mix until all the dry and wet ingredients are combined.
  6. Heat the electric griddle over medium heat (300 degrees).
  7. Spread butter over the top of the griddle or spray with a non-stick cooking spray.
  8. Pour 1/2 cup to one cup batter on the griddle.
  9. Add in 5-10 blueberries per pancake depending on your personal preference.

  10. Heat until bubbles are formed.
  11. Once you can see several bubbles, they are ready to flip.
  12. Flip the pancakes over and cook for about 30 more seconds. They will be golden brown.
  13. Take them off the griddle and serve warm.

  14. You can top them with syrup, maple syrup, berries, butter, powdered sugar, cinnamon sugar, or honey.

Notes

Make sure the blueberries are not touching when you drop them into the cooking pancake so that the batter will be able to completely cook around them.
The buttered griddle gives them the crispy edges.
