- Gradually pour the wet mixture into the dry ingredients, stirring continuously to ensure a smooth, lump-free batter. Mix until all the dry ingredients are just moistened and combined.
- Heat the griddle over medium heat (300 degrees). Some like to turn it to medium-high heat, but medium works perfectly with my griddle.
- Spread butter over the top of the griddle or spray with a non-stick cooking spray. The butter helps them to get the crispy edges.
- Pour 1/2 cup to one cup batter on the griddle and heat until bubbles are formed. If you want to add chocolate chips or fresh blueberries, now is the time.
- Once you can see several bubbles, they are ready to flip.
- Flip the pancakes over and cook for about one more minute. They will be golden brown.
- Take them off the griddle and serve warm.
- You can top them with syrup, maple syrup, berries, butter, powdered sugar, cinnamon sugar, or honey.
