Instructions
- Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease with cooking spray.
- Mix all of the ingredients together in a large bowl. Stir until well mixed.
- Add optional mix-ins, such as chopped nuts or dark chocolate chips, for extra flavor and texture.
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Don't over bake!
