Preparation Instructions
1. Prepare the Roasted Vegetables
Start by prepping the vegetables. Preheat your oven to 400°F. Then, wash and chop the zucchinis, bell peppers, and red onions, and whatever veggies you are going to use. Halve the cherry tomatoes to ensure they cook evenly. Make this what you want. Just use the veggie you like.
In a large bowl, toss the vegetables with olive oil, garlic powder, smoked paprika, dried oregano, salt, and freshly ground black pepper. Make sure the vegetables are well-coated with the oil and seasonings. This mixture will infuse the vegetables with flavor as they roast. To simplify things, I just put everything on the pan and season it straight on there. It saves me a dish and time.
Spread the vegetables in a single layer on a large baking sheet. Place the sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through. The vegetables should turn golden and tender, with slight crispiness on the edges.
2. Cook the Deer Salami
While the vegetables are roasting, heat a skillet over medium heat and add the olive oil. Once the oil is hot, add the sliced deer salami in a single layer. Cook the salami for about 2-3 minutes on each side until it crisps up and releases its smoky, rich flavors. The salami should develop a nice sear but still remain tender inside.

3. Assemble the Dish
Once the vegetables are perfectly roasted and the deer salami is crisped to your liking, it’s time to assemble the dish. Start by plating the roasted vegetables as the base. Then, put the deer salami slices on top of the vegetables. The warm salami will mingle with the flavors of the roasted vegetables, creating a delightful contrast between the smokiness of the meat and the natural sweetness of the veggies.
Why Deer Salami?
Deer salami, or venison salami, is a delicious alternative to traditional pork or beef salami. Venison is leaner and has the best flavor that pairs beautifully with roasted vegetables. Deer salami also provides a great source of protein and is lower in fat than many other cured meats, making it a healthy yet indulgent option for dinner.
If you don’t have access to deer salami, you can always substitute with other types of salami or cured meats like turkey salami or chicken sausage. We highly recommend Webb’s Butcher Block.
Pairing the Meal
A good salad would go great with this meal. Mashed potatoes and corn on the cob would also be a great option. I am thinking of dessert too. You could try out these 4-ingredient pumpkin cookies for a simple and seasonal dessert.
Tips for Success
• Don’t overcrowd the baking sheet when roasting the vegetables. Giving the vegetables space allows them to cook evenly and get that perfect caramelized texture. If you have too many vegetables on the tray, they will steam instead of roast.
• Use a variety of vegetables for added flavor and texture. You can easily swap out the zucchinis or bell peppers for other seasonal veggies like sweet potatoes, carrots, or even Brussels sprouts. The key is to use vegetables that will caramelize well in the oven.
• Let the salami rest for a few minutes after cooking. This allows the flavors to settle and enhances the taste.
• Adjust the seasoning to your liking. Feel free to add more garlic, smoked paprika, or even some herbs like thyme or rosemary to customize the flavor profile to your taste preferences.

Why This Recipe Works
This dish also works well for any season. In the winter, you can enjoy the warmth and comfort of roasted vegetables, while in the summer, the lightness of the ingredients makes it a perfect choice for a warm evening meal. The recipe is also flexible enough to accommodate different dietary preferences and can easily be made gluten-free or dairy-free by adjusting the side dishes or garnishes.
Where Does Deer Salami Come From
Getting high quality deer salami starts with sourcing the right venison. First, you need access to fresh, lean deer meat from a trusted hunter or butcher. Deer meat, also known as venison, provides a lean and rich flavor that makes for excellent salami. Once you have your deer, take it to a processor or butcher who specializes in curing meats. Many processors offer deer salami as part of their service, especially during hunting season. It is also referred to as summer sausage.
If you are having deer salami for the first time, you are in for a real treat! It is one of the most healthy meats you can have and you can’t find it in regular grocery stores. We are eating all of what we had made last year and can’t wait to send off for more this year.
You can make your own deer salami at home if your up for the challenge. You’ll need to grind the venison, mix it with pork fat or beef fat, and blend it with seasoning such as garlic, black pepper, and paprika. Add in cheeses and jalapenos. After preparing the meat, stuff it into casings and cure it by following specific methods for salami.
Deer salami is a favorite around here. It goes great with eggs, crackers and cheese, by itself, fried up for grilled cheese, and diced up with fresh veggies. The list goes on and on. You can eat it cold too. Venison meat is lean, healthy, and versatile.
Final Thoughts
This deer salami and fresh roasted vegetables dinner recipe offers a deliciously unique take on a hearty, flavorful meal. This will become a favorite in your recipe rotation. It is good, quick, and healthy. Enjoy!
