These protein-packed pumpkin muffins blend the rich flavors of fall with a healthy boost, perfect for on-the-go energy. They are a seasonal favorite and offer a nutritious and satisfying option for quick breakfasts or snacks without compromising on taste.

Ingredients
  

  • 2 cups Kodiak Power Cakes Buttermilk Flapjack & Waffle Mix
  • ¾ cup milk
  • ¾ cup light brown sugar
  • ¼ cup avocado oil
  • 1 cup canned pumpkin puree
  • 1 large egg
  • 1 ½ tsp cinnamon
  • 1 tsp vanilla extract

Equipment

  • large mixing bowl
  • muffin tin
  • cupcake/muffin liners

Method
 

  1. Preheat your oven to 350°F and line a muffin tin with paper liners or lightly grease with cooking spray.

  2. Mix all of the ingredients together in a large bowl. Stir until well mixed.

  3.  Add optional mix-ins, such as chopped nuts or dark chocolate chips, for extra flavor and texture.

  4. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.

  5. Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Don't over bake!

  6. Remove the muffins from the baking tin and let them cool on a cooling rack.
