Mississippi Pot Roast With Venison: Easy & Amazing!
If you love venison, this Mississippi pot roast with venison recipe is a must-try. It’s packed with flavor, simple to make, and perfect for a cozy winter night or a busy weekday. My sister gave this recipe to me several years ago and it is one of our favorites.

Mississippi Pot Roast with Venison: Easy & Amazing!
Equipment
- large cast iron skillet or skillet (for searing)
- large crock pot
Ingredients
- 1 (3-4 lb.) venison roast (you can use any type of roast)
- 3-4 tbsp. olive oil
- 1 au jus seasoning packet
- 1 ranch seasoning packet
- 1 stick butter (sliced or cubed)
- 1 16 oz. jar of pepperoncinis peppers (juice too)
- baby potatoes or diced potatoes (optional)
- baby carrots (optional)
- 1/2 stick butter- if you are adding the veggies, you can add more butter
Instructions
- Heat 4-5 tablespoons of olive oil in a large cast-iron skillet (any skillet) over medium-high heat.
- Sear the outside of the roast until golden brown on all sides.
- Place the seared roast directly into the crock pot.
- Sprinkle the au jus seasoning and the ranch seasoning over the top of the roast.
- Place the sliced or cubed stick of butter into the crock pot.
- Pour in the entire jar of pepperoncinis. Make sure to include all the juice and all the peppers.
- Add in optional veggies and potatoes. I used carrots and baby golden potatoes. Oh, and some leftover celery.
- Cook on low for 8 hours (best results) or on high for 5 hours. Low and slow really gets it nice and tender.
- After 8 hours, the meat will be nice and tender. Shred it with forks or meat scissors and then make sure it is all stirred around in the cooking juices.

Ingredients for this Easy Venison Mississippi Pot Roast
• 1 venison roast (3–4 pounds, slightly smaller works too)
• 3–4 tablespoons olive oil
• 1 packet ranch seasoning
• 1 packet au jus seasoning
• 1 stick butter, cubed (I add an extra 1/2 a stick if adding in the optional veggies-potatoes, baby carrots, celery)
• 1 (16-ounce) jar of whole pepperoncini peppers (juice included)

Instructions for Easy Venison Mississippi Pot Roast
1. Heat a cast iron skillet over medium-high heat. Add just enough oil to coat the bottom (about 3–4 tablespoons).
2. Sear the venison roast on all sides until golden brown. Turn it as it sears to get an even crust.
3. Place the roast in the crock pot.
4. Sprinkle the ranch seasoning and au jus seasoning over the top of the roast.
5. Cube the butter and scatter it evenly over the roast.
6. Pour in the entire jar of pepperoncinis, including the juice.
7. Cover and cook on low for 8 hours or high for 4–5 hours.
8. Shred the meat using two forks or a meat shredder. If you remove it from the slow cooker, return it to the juices for extra flavor. The cooking liquid is delicious and you will want to use up every bit of it.

How to Serve It
This Mississippi pot roast is amazing on a bed of homemade mashed potatoes. Pair it with Glory-style green beans for a classic Southern meal. It’s also delicious on toasted hoagie rolls for an easy sandwich.
Tips for the Best Venison Pot Roast
• Sear all sides of the roast (top, bottom, and sides) for the best flavor.
• Use a crock pot for an easy slow cooker recipe, or speed up the time with an Instant Pot on high pressure for about 90 minutes.
• Don’t skip the butter! The entire stick of butter is key to the richness of this dish.
• If using chuck roast or beef roast, follow the same steps. The result will be just as tender.
