Ingredients

  • 1 sourdough bread bowl
  • 8 oz. package of cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 (2.5 oz. pkgs) dried, chipped beef, diced (add to taste, I recommend 1 – 1.5 of the beef or else it gets really salty)

Method

  1. Dice the dried, chipped beef and set it to the side. You do NOT need to use all of it.
  2. Preheat the oven to 350°.
  3. Remove the center of the sourdough bread bowl.
  4. Cut the center of the bread bowl into cubes for dipping.
  5. Mix the cream cheese and mozzarella cheese together.

  7. Spoon the mixture into the center of the bread bowl.
  8. Bake on a baking sheet for 45 minutes.
  9. Serve warm with bread cubes.

If you love a good Reuben sandwich, you’re going to really enjoy this hot baked Reuben dip. It’s rich, creamy, cheesy, and perfect for game days or casual get-togethers.

I like to serve it in a hollowed out sourdough bread bowl with extra bread cubes on the side. You can even throw in some potato chips or your favorite crackers.

This dip is indulgent, cozy, and ridiculously easy to make.

Ingredients You’ll Need for Reuben Dip

Let’s keep it simple. Here’s what goes into this cheesy dip:
• 1 sourdough bread bowl (grab one at the grocery store)
• 8 oz package of cream cheese, softened
• 1 cup shredded mozzarella cheese
• Two 2.5 oz jars of dried chipped beef, diced (you won’t use all of it)

If you want to go the more traditional Reuben sandwich route, you can also sub in some finely chopped corned beef. Either way, you’ll get that salty, meaty bite that makes this creamy dip so addictive.

How to Make the Hot Reuben Dip

Step 1: Preheat and Prep

Set your oven to 350°F. While it’s heating up, dice your dried chipped beef and set it aside. You’re not going to need all of it—just enough to get that deep, rich flavor without going overboard on salt.

Step 2: Hollow and Cube

Slice off the top of your sourdough bread bowl (or hollowed out rye bread bowl if that’s what you’ve got). Scoop out the inside carefully. Don’t toss the bread—you’re going to cube it into small pieces for dipping.

Step 3: Mix the Filling

In a medium bowl, mix the softened cream cheese and shredded mozzarella until smooth. Fold in your chopped beef—start small and taste as you go. Too much can overpower the creamy texture. You want balance here.

Step 4: Fill the Bread Bowl

Place the hollowed bread bowl on a baking sheet. Spoon the cheesy dip mixture inside. Don’t worry if it looks like it’s mounded on the top of the dip—it settles beautifully while it bakes.

Step 5: Bake It

Bake the whole thing at 350°F for about 45 minutes. The outside of the bread gets golden and crusty. The dip inside turns warm, gooey, and perfectly scoopable. This is your hot Reuben dip moment.

Serving Tips

Once it’s hot and bubbly, pull it from the oven and serve immediately. Arrange your leftover bread cubes around the bowl. Add some favorite crackers or potato chips if you like a little crunch. This indulgent dip goes fast, so don’t expect leftovers—but if you have any, store it in an airtight container in the fridge.

You can also reheat this in a slow cooker for parties. Just spoon the filling into a small crock and warm on low for 25-30 minutes in the slow cooker, or until fully heated through. Imagine how good some homemade sauerkraut on the side would be.

The Perfect Way to Feed a Crowd

This is the perfect way to bring comfort food to your next gathering. The creamy texture, the rich flavor, and the satisfying bread bowl make it a hit every single time.

Whether you’re watching the big game or just hanging out with friends, this hot baked Reuben dip brings people in.
