How to Make Kodiak Power Cakes Muffins (Chocolate Chip)

Kodiak Power Cakes Muffins (Chocolate Chip)

These delicious and simple muffins make for a great snack, treat, or grab-n-go breakfast. You can customize them to your liking and enjoy them anytime of day.
Prep Time 10 minutes
Course: Appetizer, Breakfast, Snack

Ingredients
  

  • 2 cups Kodiak Mix
  • ¾ cup milk (we use 2%)
  • ½ cup brown sugar (I haven't tried maple syrup yet)
  • ½ cup chocolate chips, chopped fruit, or nuts (I used chocolate chips this go round)
  • ¼ cup melted butter
  • 2 mashed bananas
  • 1 egg
  • 1 tsp. cinnamon
  • 1 tsp. vanilla

Method
 

  1. Preheat your oven to 350°.
  2. Prep your muffin pan by adding liners or greasing the muffins cups.
  3. In a large bowl, combine all of the ingredients and stir it until it is smooth. I just use a regular spoon for this and some muscle. No need for the electric mixer.
  4. Fill each prepared muffin cup ¾ of the way full.
  5. Bake for 13-16 minutes or until set in the middle.

Notes

You can substitute 1/2 cup of Greek yogurt for the bananas and 1/2 cup of fresh or frozen blueberries.

  • 3/4 cup milk of choice
  • 1/2 cup brown sugar (you could try maple syrup or honey- I haven’t yet)
  • 1/2 cup chopped fruit, nuts, or chocolate chips ( I used chocolate chips for this recipe)
  • 1/4 cup butter, melted
  • 2 bananas, mashed
  • 1 egg
  • 1 tsp. cinnamon
  • 1 tsp. vanilla

How to Make Kodiak Power Cakes Muffins

  1. Preheat your oven to 350 degrees.
  2. Prepare your muffin pan cups by putting a liner in them or greasing them.
  3. In a large bowl, mix together all of the ingredients listed above. Stir until smooth. No need for a mixer here.
  4. Fill the prepared muffin cups 3/4 of the way full with batter.
  5. Bake them for 13-16 minutes or until the center is set. You don’t want a gooey center for these.

Substitution Options for Kodiak Power Cakes Muffins

You can substitute 1/2 cup of plain Greek yogurt for the bananas and add 1/2 cup fresh or frozen blueberries. You can also choose between the types of chocolate you use, nut variations, and chopped fruit add-ins.
