Simple Einkorn Brownies

These einkorn brownies made with freshly milled einkorn flour are delicious and simple to make. They are made with cocoa, einkorn flour, and maple syrup.

Ingredients
  

  • 115 g. einkorn flour (about 1 cup)
  • cup cocoa powder
  • 1⅓ cup sugar (1 cup sugar + ⅓ cup maple syrup)
  • ¼ tsp. baking powder
  • ¾ cup melted butter
  • 3 large eggs, room temperature
  • 1 tbsp. vanilla extract
  • 1 cup chocolate chips (I combined dark morsels and mini semi-sweet morsels for this particular batch)

Equipment

  • grain mill (if you are going to freshly mill the einkorn flour)

Method
 

  1. Preheat your oven to 350°.
  2. Grease an 8 x 8 or 9 x 9 inch pan.
  3. In a large mixing bowl, mix together all of the ingredients. Stir about 30-50 times.
  4. Pour the batter into your prepared baking pan.
  5. Bake for 30-35 minutes or until the center is just set. They will continue to set up once you take them out of the oven.

Freshly Milled Einkorn Brownie Ingredients

Here’s everything you’ll need:

  • 115 grams (about 1 cup) of freshly milled einkorn flour (you can use store bought or your flour of choice here)
  • 2/3 cup cocoa powder
  • 1 1/3 cup sugar (please note that I substitute maple syrup for part of the sugar (I used 3/4 cup sugar and made the rest maple syrup for this batch)
  • 1/4 tsp. baking powder
  • 3/4 cup butter, melted
  • 3 large eggs, room temperature
  • 1 tbsp. vanilla extract
  • 1 cup chocolate chips (your choice here, but I enjoy using a combination of mini semi-sweet morsels and dark chocolate morsels)

How to Make Einkorn Brownies

  1. Preheat your oven to 350 degrees.
  2. Grease an 8 x 8 or 9 x 9 -inch baking pan. You can use a non-stick spray, but I usually grab a paper towel, add a little room temperature butter, and spread it all around the pan.
  3. In a large bowl, add all of the ingredients and mix until everything is fully combined. Stir it about 30-50 times.
  4. Pour the batter into your prepared pan and spread it evenly.
  5. Bake them for 30 minutes, then check the center to make sure it is set. This batch cooked for 33 minutes. I checked on it every minute for those last three minutes. They will continue to set up once you take them out and will be perfect.
  6. Hold off for a couple of minutes and then dig in. We love to eat them warm, but they will still be delicious the next day.
