Ingredients
  

  • 3 lbs. chicken breast (about 4 large breast)
  • 2 cups diced onions
  • 2 cups diced green, red, yellow bell peppers (you can use the same color)
  • 2 10 oz. packages of beef bacon (cut into 1 x 1 in. squares and cooked)
  • 2 cups Jasmine rice
  • 3 cups water, to cook the rice in
  • 6 tbsp. taco seasoning (for chicken in the crock pot- I add more than that, but it's up to you)
Jalapeno Cheddar Sauce (high protein)
  • ¾ cup Greek yogurt (heaping)
  • 4 tbsp. softened cream cheese
  • ¼ cup diced jalapenos (fresh or from a jar)
  • ½ cup shredded cheddar cheese
  • 2 tsp. water (you can add less or more depending on how you want the consistency)

Crock-Pot Chicken
  1. Cook the chicken, onions, peppers, and seasoning in the crock-pot on high for 3 hours.
  2. About 30-40 minutes before the chicken is done, cook the bacon and rice. Mix up the protein sauce at this time as well.
Bacon
  1. Cook the diced bacon pieces over medium heat in a pan with a lid until nice and crispy. Drain on a paper towel lined plate. Set to the side.
Rice
  1. Cook the rice according to the package directions. I add a bit of butter to mine as well.

  1. In a large blender, blend together the Greek yogurt, cream cheese, diced jalapenos, shredded cheddar cheese, and water. You can even add in a bit of taco seasoning to season it up a bit.
