Crock-Pot Chicken
- Cook the chicken, onions, peppers, and seasoning in the crock-pot on high for 3 hours.

About 30-40 minutes before the chicken is done, cook the bacon and rice. Mix up the protein sauce at this time as well.
Bacon
- Cook the diced bacon pieces over medium heat in a pan with a lid until nice and crispy. Drain on a paper towel lined plate. Set to the side.

Rice
- Cook the rice according to the package directions. I add a bit of butter to mine as well.

Jalapeno Cheddar Sauce (High Protein)
- In a large blender, blend together the Greek yogurt, cream cheese, diced jalapenos, shredded cheddar cheese, and water. You can even add in a bit of taco seasoning to season it up a bit.

Construct the High-Protein Bowl
- Once the chicken is done, shred it and stir.
- Combine the shredded chicken, onions, peppers, cooked bacon, cooked rice, and jalapeno cheddar sauce in a very large bowl. Stir until combined.

- Serve or let cool and meal-prep into individual glass containers for later....or both!
