How to Make Fresh Lemon Poppy Seed Streusel Bread

Lemon Poppy Seed Streusel Bread

This lemon poppy seed streusel bread is soft, bursting with lemon flavor, and topped with the perfect buttery crunch. Lemon is one of my favorite things!

Ingredients
  

Streusel
  • ¼ cup all-purpose flour
  • 2 tsp. white granulated sugar
  • 1 ½ tsp. poppy seeds
  • tbsp. cold butter
Bread Batter
  • cups white granulated sugar
  • 3 tbsp. lemon zest
  • ½ cup butter, softened
  • 3 eggs, room temperature
  • 1 tsp. vanilla extract
  • cup all-purpose flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 2 tsp. poppy seeds
  • ½ cup buttermilk, room temperature
  • 2 tbsp. fresh lemon juice

Equipment

  • 8 ¼ x 4 ½ in. bread loaf pan

Method
 

Streusel
  1. In a medium bowl, whisk together ¼ cup flour, 2 tsp. sugar, and 1½ tsp. poppy seeds.

  2. Cut in the 1½ tbsp. cold butter using two forks or a pastry cutter. You want the mixture to turn crumbly. I think that just getting in there with your hands is just as easy. Maybe easier!
  3. Refrigerate for 30 minutes.
  4. Preheat the oven to 375°.
  5. Spray your bread pan with non-stick spray with flour. You can line it with parchment paper too. Just let the parchment hang over the sides. It actually helps to keep the streusel in.
Bread Batter
  1. I recommend using a stand mixer. Mix 1 ¼ cups sugar, 3 tbsp. lemon zest, and butter for 4 minutes. Scrape the bowl as needed.

  2. Add eggs, one at a time and beat for one minute after adding each one. Scrape down the sides of the bowl as needed.

  3. Mix in the vanilla and beat for one minute.

  4. In a medium bowl, mix together 2 ¼ cups all-purpose flour, 1½ tbsp. poppy seeds, 2 tsp. baking powder, and ½ tsp. salt.

  5. Gradually add in the flour mixture. Pour in a little of the flour mixture and then a little of the buttermilk and keep alternating. Do this just until combined each time.

  6. Pour the batter into the prepared pan and spread it around.

  7. Help the batter to settle by taping the pan on the counter. Put a dish towel down so it wont be loud or damaging.

  8. Top the bread with the streusel. (Yum!)

  9. Bake for 20 minutes and then reduce the temperature to 350°.
  10. Bake for about 50 minutes more, or until a toothpick inserted in the center comes out clean.
  11. Let it cool for 15 minutes.

Let’s start with the buttery streusel topping. You’ll want:

  • 1/4 cup all-purpose flour
  • 2 teaspoons granulated sugar
  • 1½ teaspoons poppy seeds
  • 1½ tablespoons cold butter

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole buttermilk (room temp)
  • 2 tablespoons fresh lemon juice

Lemon Glaze for Lemon Poppy Seed Streusel Bread 

  • 2 cups powdered sugar
  • 4-5 teaspoons fresh squeezed lemon juice

Make the Streusel Topping

Grab a medium mixing bowl. Add your flour, sugar, and poppy seeds. Give it a quick whisk. Now comes the cold butter. You can use a pastry cutter or two forks. I just use my hands—it’s faster, and it works. Keep working that butter in until the mixture looks crumbly.

Pop that bowl in the fridge. Keeping the topping cold helps it hold its shape while it bakes.

Prep Your Loaf Pan

Preheat your oven to 375°. Grab your 8½ x 4½-inch loaf pan. Spray it with cooking spray with flour or line it with parchment paper.

I like to let the paper hang over the sides a little. It catches the streusel and makes the loaf easy to lift out when it’s done.

Start the Batter

In a large mixing bowl—stand mixer or hand mixer both work—combine the sugar and lemon zest. Just mix them together for a few seconds. That helps release all those lemon oils. It smells amazing.

Add in the softened butter. Beat for 4 minutes. Don’t rush this part. You want the mixture to be light and fluffy. Scrape down the bowl as needed.

Now add your eggs, one at a time. Beat each egg for about a minute. This keeps your lemon poppy seed streusel bread light and tender. Add the vanilla and beat for one more minute.

Combine the Dry Ingredients and the Wet Ingredients

In a medium bowl, whisk together the flour, poppy seeds, baking powder, and salt. In another small bowl, mix the buttermilk and lemon juice.

Turn your mixer to low. You’ll add the flour mixture and the buttermilk mixture in turns. A little flour, a little liquid. Start and end with the flour. Mix just until everything is combined. Don’t overmix.

Pour the batter into your prepared loaf pan. It’s thick, so use a spatula to smooth it out. Then, give the pan a gentle tap on the counter to settle it. I do this on a folded kitchen towel so I don’t damage anything.

Bake It Just Right

Bake the loaf at 375° for 20 minutes. Then, lower the oven temperature to 350°. Bake for another 45 to 50 minutes. Your fresh lemon poppy seed streusel bread is ready when a toothpick in the center comes out clean.

Let it cool in the pan for 15 minutes. Then carefully lift it out and place it on a wire rack. For best results, let it finish cooling for another 20 to 30 minutes.

Simple Lemon Glaze

In a mixing bowl, mix together the powdered sugar and the fresh lemon juice. For a thicker sweet glaze, add in more powdered sugar. For a thinner glaze, add in more lemon juice. The fresh lemon flavor of the glaze is a great addition.

Drizzle glaze over the cooled bread or just over each individual piece as you serve it. The lemony flavor is one of my favorites.

If you don’t have any additional lemon juice, you can mix lemon extract and milk into the powdered sugar to get the same vibe.
