Copycat Crumbl Lemon Crinkle Cookies

Oh man! Lemon is one of my favorites. These light cookies are so fresh and fun to make. They are rolled in a sugar mixture and perfect for spring and summer. Enjoy!

Ingredients
  

Lemon Crinkle Cookies

  • 1 cup butter, softened
  • cup granulated sugar (or sugar in the raw)
  • ½ tsp. vanilla extract
  • ½ tsp. almond extract
  • ¼ tsp. lemon extract
  • 2 eggs, room temperature
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. lemon zest
  • cups all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. baking soda

Sugar Topping

  • ½ cup powdered sugar
  • ¼ cup white granulated sugar

Instructions
 

Prep Work

  • Preheat your oven to 350°.
  • Line your baking sheet with parchment paper.
  • Zest the lemons to get 2 tbsp. of lemon zest. Don't get into the white. NOT good.

  • Squeeze the lemons to get 2 tbsp. of fresh lemon juice. Remove any seeds that find their way in.
  • Measure out ¼ cup white granulated sugar into a small bowl and ½ cup powdered sugar into a different small bowl to roll the cookies in before baking.

Cookie Dough

  • Cream together 1 cup softened butter and 1¾ cup granulated white sugar for 3 minutes. Scrape down the sides as needed. Turn off the mixer before doing that though.

  • Add in ½ tsp. vanilla, ½ tsp. almond extract, ¼ tsp. lemon extract, 2 large room temperature eggs, 2 tbsp. fresh lemon juice, and 2 tbsp. lemon zest.
  • In a separate bowl, mix together 3½ cups all-purpose flour, 1 tsp. baking powder, ½ tsp. baking soda, and ½ tsp. salt.

  • Mix the flour into the wet Ingredients until just combined. You can even do this by hand if you don't want to over mix.

Roll the Dough

  • Use a ⅓ cup measuring scoop to measure out the dough.

  • Roll the dough into a ball, then into the white sugar, and then into the powdered sugar. Just for good measure!

  • Bake 4-6 cookies at a time. Use the palm of your hand or the bottom of something similar to gently press down the cookies before baking. They will still be very thick.
  • Bake for 8 minutes, remove, and let cool on the pan for 5 minutes.

  • 1 cup butter (softened)
  • 1 3/4 cups granulated sugar (or sugar in the raw)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon lemon extract
  • 2 large eggs (room temperature)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lemon zest (from about 2 lemons)
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

For the Sugar Topping

  • 1/2 cup powdered sugar
  • 1/4 cup white granulated sugar

How to Make Copycat Crumbl Lemon Crinkle Cookies

Get Ready

1. Preheat the Oven
Start by preheating your oven to 350°. Line a baking sheet with parchment paper to prevent the cookies from sticking.
2. Prepare the Lemons
Zest the lemons until you have 2 tablespoons of lemon zest, being careful not to get into the white part. NOT yummy! Then, squeeze the lemons to get 2 tablespoons of fresh lemon juice. Watch out for the seeds.
3. Prepare the Sugar Topping
Pour 1/4 cup of white sugar into one small bowl and 1/2 cup powdered sugar into another small bowl. Set aside for rolling the cookies before baking.

It’s Dough Time (Get it! lol)


4. Make the Lemon Crinkle Cookie Dough
In a large bowl, cream together the softened butter and 1 1/3 cups of granulated sugar for 3 minutes. Scrape down the sides of the bowl as needed.
Add in the vanilla extract, almond extract, lemon extract, eggs (one at a time), fresh lemon juice, and lemon zest. Mix until well combined.
5. Combine the Dry Ingredients
In a separate medium bowl, whisk together 3 1/2 cups of all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix. You can do this by hand, use the stand mixer, or use a hand mixer.

6. Shape the Cookies
Using a 1/3 cup measuring scoop (or a super large cookie scoop), portion out the cookie dough balls and roll each portion into a ball. Then, roll the dough balls first into the white granulated sugar, and then into the powdered sugar. Place them on the prepared baking sheet. Gently press down each ball using the back of the scoop or the palm of your hand, but keep them thick to maintain that crinkle effect. Press on a bit more powdered sugar once you have pressed them down.

Bake Time: Careful Now.. No overbaking!


7. Bake the Cookies
Bake the cookies for about 8 minutes. If you prefer a crinklier texture, bake them for an additional minute or two, but be careful not to overbake them. After baking, allow the cookies to cool on the pan for about 5 minutes before transferring them to a cooling rack to cool completely.
8. Finish and Enjoy!
If you like, sprinkle more powdered sugar on the cooled cookies for an extra touch. These baked cookies stay soft for up to three days, making them perfect for baking ahead!

Can I use bottled lemon juice instead of fresh juice?
Fresh lemon juice is the way to go in this recipe. Lemon lovers will appreciate the fresh lemon flavor. 


Can I freeze the dough?
Yes! You can freeze the dough by rolling it into balls and placing them on a baking sheet to freeze for about an hour. Once frozen, transfer the dough balls to a freezer bag. When you’re ready to bake, simply bake the frozen dough balls for a few extra minutes. You will have to adjust your baking time as well. Just keep an eye on them. 

How do I keep the cookies soft?
To keep your cookies soft, store them in an airtight container. Not all cookies are good the next day. These are good for three days! 

Can I make these gluten-free?

Tips for the Best Lemon Crinkle Cookies

  • Room temperature butter and eggs: Having the eggs and butter at room temperature really help to make a delicious dough and cookie. 
  • Roll Generously in Sugar: Don’t be shy with the sugar topping! Rolling the dough in both granulated and powdered sugar helps create the signature crinkle effect. After you press down the cookie, gently press on a bit more powdered sugar. 
  • Cool on baking sheet: Make sure you leave them on the baking sheet for 5 minutes after taking them out of the oven.
