Chicken Cobbler with Red Lobster Biscuit Mix

Ingredients
  

  • ½ stick butter, melted
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 pkg. frozen peas and carrots
  • 1 whole rotisserie chicken, shredded (3 cups)
  • 10.5 oz. cream of chicken soup
  • 2 cups chicken stock
  • 2 cups milk
  • 1 pkg. Red Lobster biscuit mix with seasoning packet

Instructions
 

  • Preheat your oven to 425°.
  • Saute the diced onion and celery in two tablespoons of oil or butter for 10 minutes.
  • Melt the butter and pour it in your pan or melt the butter in the pan in the oven.

  • Put the shredded chicken over the melted butter.

  • Pour the mixed veggies over the chicken.

  • Pour the diced onion and celery over the frozen veggies.

Red Lobster Biscuit Mix Topping

  • In a large bowl, mix together 2 cups of milk, the biscuit mix, and the seasoning packet. Whisk until smooth.

  • Pour the batter over the chicken casserole.

Chicken Stock & Cream of Chicken Mixture

  • Using the same bowl from the biscuit topping, mix together the chicken stock and the cream of chicken soup.

  • Pour that over the top. You don't need to stir anything.

Bake

  • Bake uncovered for 1 hour to 1 hour and 15 minutes.

A friend of mine told me about this viral recipe. I tweaked just a couple things and couldn’t wait to share it with you.

The simplicity of using a rotisserie chicken in this recipe is a time saver. However, you can use about three chicken breast if you want to. I have gotten by with two, but three is better. You want to have about 3 to 3 1/2 cups worth of shredded or chopped chicken. 

It really is a simple as dumping everything into a baking dish and baking until golden brown. I’ll break it down for you, but you can definitely do it.

My whole family loves this recipe and I hope you will give it a try. If you like red lobster biscuits and tender chicken, you are in the right place!

Simple Ingredients You Will Need for Chicken Cobbler with Red Lobster Cheddar Bay Biscuit Mix

  • 2 cups chicken stock or chicken broth
  • 2 cups whole milk (any milk will work)
  • Red Lobster Cheddar Bay Biscuit Mix & seasoning packet (no cheddar cheese)
  • 1/2 stick butter, melted
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 pkg. frozen peas and carrots (we love a small bag of frozen corn and a small bag of frozen cauliflower rice)
  • 1 whole rotisserie chicken, skinned and shredded (3 1/2 cups chopped)
  • 1 can cream of chicken soup

Steps for Making Chicken Cobbler with Red Lobster Biscuit Mix

​1. Preheat your oven 425.

2. Saute the diced onions and celery in 2 tablespoons of butter over medium heat for 10 minutes. This is optional.

3. Pour the melted butter into the bottom of the baking dish. I use a 9 x 13 baking pan for this hearty dish. 

4. Layer the shredded chicken in a single layer over the butter. You can use a shredded rotisserie chicken for this or cooked chicken breasts.

5. Pour on the mixed vegetables. You will add both the frozen vegetables and the sauteed veggies at this time. Remember, you don’t have to add the sauteed onion and celery. 

6. Season with salt and pepper. You can add in 1/2 tsp. of onion powder and 1/2 tsp. of garlic powder if you want. 

7. In a large bowl, mix together the biscuit mix, seasoning packet, and two cups of milk. 

8. Pour the biscuit mixture over the top of the casserole in an even layer. You don’t need to stir it around.

9. In the same mixing bowl, mix together the cream of chicken soup and the chicken stock. Pour that evenly over the top.

10. Bake in the preheated oven for an hour to an hour and fifteen minutes. It will be golden brown and bubbly. Watch the bake time, you want a creamy chicken cobbler that has a thick, gravy consistency.

Leftover Chicken Cobbler

Store any leftovers in an airtight container or just put some aluminum foil over the baking dish. That’s, if you have any leftovers at all. We might have about one cup left over.

What Sides Could I Serve with Chicken Casserole/Cobbler

This chicken pot pie casserole is the ultimate comfort food and is like having a complete meal.

However, if you want to serve it with green beans, mashed potatoes, or a fresh simple green salad, that would make for a yummy addition.
