Chicken Cobbler with Red Lobster Biscuit Mix

Ingredients
  

  • ½ stick butter, melted
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 pkg. frozen peas and carrots
  • 1 whole rotisserie chicken, shredded (3 cups)
  • 10.5 oz. cream of chicken soup
  • 2 cups chicken stock
  • 2 cups milk
  • 1 pkg. Red Lobster biscuit mix with seasoning packet

Method
 

  1. Preheat your oven to 425°.
  2. Saute the diced onion and celery in two tablespoons of oil or butter for 10 minutes.
  3. Melt the butter and pour it in your pan or melt the butter in the pan in the oven.

  4. Put the shredded chicken over the melted butter.

  5. Pour the mixed veggies over the chicken.

  6. Pour the diced onion and celery over the frozen veggies.
Red Lobster Biscuit Mix Topping
  1. In a large bowl, mix together 2 cups of milk, the biscuit mix, and the seasoning packet. Whisk until smooth.

  2. Pour the batter over the chicken casserole.
Chicken Stock & Cream of Chicken Mixture
  1. Using the same bowl from the biscuit topping, mix together the chicken stock and the cream of chicken soup.

  2. Pour that over the top. You don't need to stir anything.
Bake
  1. Bake uncovered for 1 hour to 1 hour and 15 minutes.
