Healthy Custard Oatmeal Made with Farm Fresh Eggs and Milk

This is the creamiest most custard like oatmeal ever. I know having an egg in it sounds weird, but it thickens it like pudding and it is so delicious. Plus, there is a bit of extra protein in it with made with eggs and milk. Trust me, give it a try!

Ingredients
  

  • 1/2 cup whole rolled oats
  • 1 cup 2% or whole milk (for best results)
  • 1 farm fresh egg (or any egg)
  • dash salt
  • 1/2 tbsp. butter (optional, but highly recommended)
  • 3 tbsp. raw sugar or coconut sugar (you can use whatever sugar you want or substitute honey or maple syrup)

Method
 

  1. Whisk all ingredients in a saucepan until the egg is completely blended and all ingredients have been mixed well.

  2. Turn the burner on medium heat and stir constantly until it thickens. This will take around 10-15 minutes.
    It might pop a few times like it is coming to a boil and that is okay as long as you are stirring it. You don't want the milk to burn or the eggs to scramble. Yikes!

  3. Take it off the heat when it reaches the consistency that you like and enjoy. Top with fresh fruit if you want.
