Preheat your oven to 375°.
Make the shredded hash browns (2-20 oz. packages) according to the package directions. Use butter to help flavor them and crisp them up.
In a large skillet of choice (cast-iron or regular), cook the bacon (1 packed thick cut diced) over medium heat, until brown. Stir frequently or else it will stick to the bottom of the pan. Messy!
Remove the bacon with tongs or a slotted spoon and let drain on a plate covered with paper towels. Pour the rest of the grease into a grease safe dish. You can keep a little in the pan for flavor.
Use the same pan and add the sausage (1 lb. ground), red pepper (1 diced), and onion (1 diced yellow onion) and cook over medium heat. Cook until the sausage is browned. Stir and break up the meat frequently while it is cooking.
Stir in the bacon, ham (1 small package of diced), pepper (1 tsp.), and salt (1 tsp.).
Coat your cast-iron skillets (6-6 inch, 1 large 12 inch, griddle, or other skillet) with butter or cooking spray.
Spread the hash browns in the bottom.
Top with the meat and veggie mixture.
Sprinkle on the cheese (2 1/2 cups shredded Cheddar).
Bake for 5-7 minutes or until the cheese is melted.
