Dill Chicken Salad With Mayo or Greek yogurt

Dill chicken salad with mayo or Greek yogurt is one of my family’s favorites. It’s creamy, fresh, and easy to make. I love throwing it together when I need a quick lunch or a simple dinner. This is a good one!

Ingredients
  

Dressing
  • cups mayo or plain Greek yogurt
  • 3 tbsp. white wine vinegar (or pickle juice)
  • 3 cloves of minced garlic
  • 1 tsp. salt 1
  • 1 tsp. pepper
  • 1 tsp. dill (add more if you want a stronger taste)
Cucumber Chicken Salad
  • 6 cups cooked shredded or cubed chicken breast (rotisserie chicken or leftover chicken will work too)
  • 3 diced cucumbers (no need to peel)
  • cup diced red bell pepper
  • 1 diced red onion (do less if you don't like onion)

Method
 

  1. In a large bowl, mix the mayo, white wine vinegar, garlic, salt, pepper, and dill until smooth.
  2. Stir in the diced cucumber, diced red onion, and diced red pepper.
  3. Stir in the chopped or shredded cooked chicken and make sure that yummy dill sauce is all over everything in that bowl!
  4. Serve it with your favorite cracker, bread, croissant, lettuce, sliced cucumber "chips", or wasa. Just eat it with a fork if you want to. It's addicting!
