Dill chicken salad with mayo or Greek yogurt is one of my family’s favorites. It’s creamy, fresh, and easy to make. I love throwing it together when I need a quick lunch or a simple dinner.

- In a large bowl, mix the mayo, white wine vinegar, garlic, salt, pepper, and dill until smooth.

- Stir in the diced cucumber, diced red onion, and diced red pepper.

- Stir in the chopped or shredded cooked chicken and make sure that yummy dill sauce is all over everything in that bowl!

- Serve it with your favorite cracker, bread, croissant, lettuce, sliced cucumber "chips", or wasa. Just eat it with a fork if you want to. It's addicting!

- 6 cups cooked chicken breast, shredded or cubed (about 2 ½–3 pounds, or 7–8 chicken breasts). I like to cut mine up and then pull it apart with my hands for a better texture. You can use leftover rotisserie chicken and leftover cooked chicken for a shortcut.
- 3 large cucumbers, diced
- 1 ½ cups red bell pepper, finely diced (any bell pepper works if you don’t have red)
- ¾ cup red onion, finely diced
Optional mix-ins: green onions, crunchy celery, or a squeeze of lemon juice.

How to Make Dill Cucumber Chicken Salad
- In a large mixing bowl, stir together the mayo or Greek yogurt, vinegar, garlic, salt, pepper, and dill.
- Add the cucumbers, onion, and bell pepper to the dressing. Mix well.
- Add in the chicken and stir until everything is coated.
