Crispy & Fluffy: Seasonal Apple Cider Sourdough Waffles from Scratch

Crispy and fluffy apple cider sourdough waffles, made from scratch, combine the tangy flavor of sourdough with the sweetness of apple cider for a delightful fall treat. This recipe creates a deliciously light and airy breakfast that captures the essence of the season in every bite.

Ingredients
  

Overnight Sponge/Batter
  • 240 grams active sourdough starter
  • 120 grams all purpose flour
  • 1 tbsp brown sugar
  • 1 cup buttermilk or (1 cup milk plus 1 teaspoon vinegar)
  • 1/2 cup apple cider
Day Of Add-In Ingredients
  • 1 egg
  • ¼ cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp cinnamon

Method
 

Step 1: Prepare the Overnight Batter
  1. Mix the Ingredients: In a large mixing bowl, combine the active sourdough starter and apple cider. Whisk them together until well blended.

Step 2: Add in the “Day Of” Ingredients
  1. Mix the Ingredients: Add the egg, butter, vanilla extract, salt, and baking powder to the fermented batter.

  2. Whisk them together until well blended.
Step 3: Cook the Waffles
  1. Preheat the Waffle Iron.

  2. Grease the Waffle Iron: Lightly grease the waffle iron with butter or oil to ensure the waffles don’t stick.
  3. Cook the Waffles: Pour enough batter onto the preheated waffle iron to cover the surface, but don’t overfill. Close the lid and cook according to the manufacturer’s instructions, typically for about 4-5 minutes or until golden brown and crisp.
  4. Remove and Serve. We love to top ours with butter and honey! Yum!

Step 4: Serve and Enjoy
  1. Once all the waffles are ready, serve them hot with your favorite toppings. Drizzle with maple syrup, top with honey, add a dollop of whipped cream, or top with fresh fruit for an extra burst of flavor. Sprinkle chopped pecans or walnuts for added crunch.
