Bacon Wrapped Venison Tenderloin Bites

These bacon wrapped venison tenderloin bites are full of flavor and the jalapenos and cream cheese top everything off.

Ingredients
  

  • 2 tenderloins (cut into 1 x 1 in. pieces)
  • 1 jar sliced jalapenos (1 jalapeno slice per bite)
  • 8 oz. block of cream cheese (room temperature)
  • 2 (16 oz.) package of bacon (cut in half)

Equipment

  • grill (we use the Big Green Egg charcoal grill)
  • 30-50 toothpicks

Method
 

  1. Start your grill. There is more than one to grill these. You know your grill better than anyone.
  2. We grilled these on the Big Green Egg, which is a charcoal grill, at 300° for about 45 minutes.
  3. Take the bacon that you cut in half, lay out the pieces.
  4. Place a piece of tenderloin on each piece of bacon.
  5. Top each with a jalapeno slice.
  6. Put a bit of cream cheese on top of each slice.
  7. The order really doesn't matter, just make sure each bite has bacon, tenderloin, jalapeno, and cream cheese.
  8. Wrap the bacon around the layers and use the toothpick to hold everything in place.
  9. Grill at 300° for about 45 minutes. Turn them occasionally. There is a lot of grease, so we elevate our grill grate.
  10. You can do a really light basting of maple syrup right before taking them off the grill if you want.
  11. Remind those that are eating to remove the toothpick and enjoy!
  12. Use caution with grilling with grease.
