How to Make Simple Fresh Milled Einkorn Chocolate Chip Cookies
These simple einkorn chocolate chip cookies are delicious and easy to mix up. If you are looking for a great beginner recipe that uses einkorn flour, this is the one!

Simple Fresh Milled Einkorn Chocolate Chip Cookies
Ingredients

- Preheat your oven to 350°.
- Line your baking sheet with parchment paper. It is fine if you don't have any.
- In a large bowl or standing mixer, cream together the 110 g. butter, 200 g. brown sugar, and 120 g. white sugar for 4 minutes.

- Mix in eggs, one at a time, and beat well between each addition.
- Mix in the vanilla and beat for 2 more minutes.
- Pour in the 480 g. of fresh milled einkorn flour, 1 tsp. baking soda, and 1 tsp. of salt. Mix on low until just combined. Scrape the sides and bottom to make sure the flour if fully incorporated.

- By hand, stir in 200 g. of chocolate chip morsels.

- Put the cookies 2 inches apart on the prepared baking sheet.
- Bake for 8 minutes.

- Take them out and let them sit on the cookie sheet for 5 minutes before removing them to cool on a wire rack.

How to Make Simple Fresh Milled Einkorn Chocolate Chip Cookies
- Preheat your oven to 350 degrees.
- Line your baking sheet with parchment paper.
- I use a stand mixer for mixing up these cookies. Cream together the butter, brown sugar, and white sugar for four minutes.
- Scrape down the sides and add the eggs, one at a time. Beat well after each addition. About 2-3 minutes per egg.
- Pour in the vanilla and beat for another 2-3 minutes.
- Scrape down the sides again and add the fresh milled einkorn flour, baking soda, and salt. Mix this until just combined on low/medium-low speed.
- Stir in the chocolate chip morsels by hand.
- Drop them by rounded spoons fulls onto the prepared baking sheet.
- Bake for 8 minutes and then take them out of the oven. If 8 minutes isn’t enough for you, let them bake for 1 to 2 minutes more. I like my soft and gooey. Plus, they continue to bake on the cookie sheet when you take them out.
- Let them sit on the baking sheet for 5 minutes before letting them cool on the wire rack.

I have been experimenting with fresh milled flour since January, 2026 and it does take a bit to get used to after baking with all-purpose flour from the store for almost 30 years.
I love that it adds nutrients to baked goods. I am on a bit of a health kick and substituting fresh milled flour into all of my recipes is my goal. I love milling my own grain. It feels different, smells different, looks different, and bakes up differently. I feel connected to the past when using it.
