Simple Fresh Milled Einkorn Chocolate Chip Cookies

These simple einkorn chocolate chip cookies are delicious and easy to make. The einkorn adds extra nutrients to this recipe and goes perfectly with the chocolate. This is a perfect recipe for beginners testing out milling their own flour and trying different grains.

Ingredients
  

  • 110 g. butter, softened
  • 200 g. brown sugar
  • 120 g. white granulated sugar
  • 2 eggs, room temperature
  • 1 tsp. vanilla extract
  • 480 g. fresh milled einkorn flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 200 g. chocolate chips (100 grams of dark + 100 grams of semi-sweet)

Method
 

  1. Preheat your oven to 350°.
  2. Line your baking sheet with parchment paper. It is fine if you don't have any.
  3. In a large bowl or standing mixer, cream together the 110 g. butter, 200 g. brown sugar, and 120 g. white sugar for 4 minutes.
  4. Mix in eggs, one at a time, and beat well between each addition.
  5. Mix in the vanilla and beat for 2 more minutes.
  6. Pour in the 480 g. of fresh milled einkorn flour, 1 tsp. baking soda, and 1 tsp. of salt. Mix on low until just combined. Scrape the sides and bottom to make sure the flour if fully incorporated.
  7. By hand, stir in 200 g. of chocolate chip morsels.
  8. Put the cookies 2 inches apart on the prepared baking sheet.
  9. Bake for 8 minutes.
  10. Take them out and let them sit on the cookie sheet for 5 minutes before removing them to cool on a wire rack.
