Let me show you how to make a peach cobbler with cinnamon and cornstarch. It’s one of my favorite summer desserts. Sweet peaches. Warm cinnamon. A sugar cookie topping that bakes up golden brown. You can smell it from the driveway.

I only use fresh peaches for this recipe. No canned peaches. Juicy peaches give the best flavor and texture. You don’t even need to peel them. Just slice them and you’re ready to go.

This has a sugar cookie type topping, not a pie crust or cake-like topping. No need for a pastry cutter, bottom crust, or top crust. The sugar cookie topping takes care of it all. Next time you are craving a cobbler, give this one a try.

How to Make a Peach Cobbler with Cinnamon and Cornstarch

Let me show you how to make a peach cobbler with cinnamon and cornstarch. It’s one of my favorite summer desserts. Sweet peaches. Warm cinnamon. A sugar cookie topping that bakes up golden brown. You can smell it from the driveway.

Course: Breakfast, Dessert

Ingredients
  

  • 5-8 sliced peaches (you don't need to peel them)
  • ½ cup granulated white sugar
  • ¼ cup brown sugar
  • ½ tsp. cinnamon
  • ½ tsp. nutmeg (optional)
  • 1 tbsp. cornstarch
  • 2 tbsp. fresh squeezed lemon juice
Sugar Cookie Topping
  • ½ cup butter (softened)
  • ½ cup granulated white sugar
  • ½ tsp. vanilla extract
  • 1 egg
  • ¾ cup all-purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. salt

Method
 

  1. Preheat your oven to 375°.
  2. Combine the sliced peaches, brown sugar, granulated white sugar, cinnamon, nutmeg, cornstarch, and lemon juice in a medium bowl. Stir it and then pour it into a 9×9 in. baking dish.

  3. Cover the baking dish with foil and bake for 20 minutes.

  4. While it is baking, cream the softened butter and granulated white sugar for 4 minutes in a medium sized mixing bowl.

  5. Add in the egg and vanilla extract and mix for 4 minutes.
  6. Gradually add in the flour, baking powder, and salt until just combined.
  7. Once the peach filling is done, remove the foil and drop the sugar cookie topping by large spoonfuls evenly across the top of the peaches.

  8. Put it back in the oven and bake for 40-50 minutes, or until it is golden brown and bubbling. You just don't want any gooey cookie dough in the middle…although, maybe you do!:)

Ingredients for the Peach Filling

You’ll need five to eight sliced peaches. That’s about eight cups of fresh fruit.  

Add ½ cup granulated white sugar.

Add ¼ cup brown sugar.

Sprinkle in ½ teaspoon cinnamon.

Mix in 1 tablespoon cornstarch.

Pour in 2 tablespoons lemon juice.

Ingredients for the Sugar Cookie Topping

½ cup unsalted butter, softened to room temperature.

½ cup white sugar.

½ teaspoon vanilla extract.

1 large egg.

¾ cup all-purpose flour.

1 teaspoon baking powder.

¼ teaspoon salt.

Step-by-Step Instructions

Step 1 — Prep the peaches.

Preheat your oven to 375°F. Place the sliced peaches in a large bowl. Add the white sugar, brown sugar, cinnamon, cornstarch, and lemon juice. Stir until the peach mixture is well coated.

Step 2 — Bake the cobbler filling first.

Pour the peach filling into a 9×9-inch baking dish. Cover the dish tightly with foil. Bake for 20 minutes so the peaches can release their juices and the cornstarch can thicken them.

Step 3 — Make the topping.

While the peaches bake, cream the softened butter and white sugar in a mixing bowl until light and fluffy. Beat in the egg and vanilla for about 4 minutes. In a separate small bowl, whisk together the flour, baking powder, and salt. Add this to the butter mixture on low speed until just combined.

Step 4 — Add the topping.

Remove the baking dish from the oven and take off the foil. Drop the topping in dollops over the top of the peaches. Spread them out a little, but don’t cover the whole thing.

Step 5 — Bake until golden brown.

Place the dish back into the oven, uncovered, for 35 to 40 minutes. The topping should turn golden brown and the peach filling should be bubbling.

Step 6 — Cool and serve.

Let the cobbler cool at room temperature if you can wait. Serve it warm with a scoop of vanilla ice cream or enjoy it plain. Either way, it’s the best peach cobbler recipe with sugar cookie topping you’ll ever make.

  • Use sweet peaches that are fully ripe for the best flavor. Juicy ripe peaches are perfect for this dessert. 
  • Don’t skip the lemon juice—it brightens the whole thing.
  • Bake the filling first. It’s the best way to make sure the peach mixture thickens.
  • Serve with a scoop of ice cream for that perfect summer bite. My husband thinks that this combo is the best part! This makes me want to make homemade ice cream.
