Creamy Tuscan Chicken Soup with Heavy Cream

This creamy Tuscan chicken soup is flavorful, hearty, and simple to make. Let the crockpot do the work and come home to a cozy meal.

Ingredients
  

  • 2 lbs. chicken breast
  • 2 tsp. sea salt
  • 2 tsp. black pepper
  • 2 tsp. Italian seasoning
  • 6 cloves minced garlic
  • 1 diced yellow onion
  • 14 oz. can of drained artichoke hearts
  • 8.5 oz. jar of sun dried tomatoes (not drained)
  • 2 cups chicken broth
  • 8 oz. fresh spinach leaves
  • 2 cups heavy cream
  • freshly grated parmesan cheese

Method
 

  1. Put the chicken breast in the crock pot and season with all the seasonings.
  2. Add in the onion, artichoke hearts, sun dried tomatoes, garlic, and lastly the chicken broth.
  3. Cook on low for 3 hours, remove and shred the chicken and then return it to the crock pot.
  4. Stir in the cream and the spinach. Enjoy!

This is one of those meals that you can just throw in the crock pot and then forget about it. I love the artichoke hearts and the sun dried tomatoes. I think they make such a great addition.

  • 2 cups chicken broth

  • 2 cups heavy cream

How to Make Creamy Tuscan Chicken Soup with Heavy Cream in the Crockpot

Add everything but the spinach and heavy cream, cook on low for 3 hours, shred the chicken, add in the spinach and heavy cream and you are done!
