You were successful in harvesting the turkey and now it is time to deep fry the wild turkey breast for two delicious meal options. Wild turkey is lean and a great source of protein. This recipe is a delicious way to share your harvest with your friends and family!
What ingredients will I need?
*Cubed wild turkey breast
*deep fryer (Fry Daddy is the one that I use)
*vegetable oil
*2 eggs
*⅓ cup milk
*2 cups of a dry batter mixture (flour, cornmeal, pre-mixed fish or chicken batter)
*salt and pepper to taste
How do I get everything prepared for frying wild turkey breast?
- Cut the turkey breast into 1 x 1 inch cubes.
- Take two eggs and ¼ cup milk and mix them in a shallow baking dish. I use a glass pie pan.
- Pour about two cups of your dry batter mix into another shallow baking dish. I use a glass pie pan or an 8 x 8 baking dish. For this recipe we used Uncle Buck’s Fish Batter Mix: Mild. You can use flour that you season well, or a fried chicken batter mix. Bass Pro has some great options! It doesn’t have to say wild turkey on the container for you to be able to use it for this recipe.
- Plug in your fryer or start heating your oil on medium heat. Give it around 5-10 minutes to heat up. You will see the oil start to swirl around. You can do this while you get everything ready if you would like. That way the oil will be hot when you are ready to fry.
Phase Two of Frying Wild Turkey Breast Chunks
- Dip 5-8 turkey chunks into the egg mixture and then shake off the excess.
- Dip those same turkey chunks into the flour mixture and coat both sides. Your hands are going to get messy.
- Shake off the excess flour, and slowly lower the turkey chunks into the hot oil. Don’t drop them in or the oil will splash and burn you. You can use a spoon to lower them in if you are nervous about dropping them in with your hands.
- Let them fry for about 5-8 minutes or until they are a deep golden brown color.
- Take them out of the oil with a slotted spoon. I have pictured the one that I have used for years in the recipe below. It is my go to spoon for frying anything!
- Lay them out on the plate or 9×13 dish that has paper towels in it. Give them a little more salt and pepper and you are ready to go.
- You could serve them with mac-n-cheese and a chopped salad.
Crispy Turkey Salad or Fried Turkey Bites
A crispy turkey salad is my favorite way to have these deep fried wild turkey breasts. It is delicious, easy to make, and a crowd pleaser. You can make a simple homemade ranch dressing to go on top of the salad or to just use as a dip for the crispy turkey bites. You can serve the fried turkey bites with any sides. Mac-n-cheese and a chopped salad make for great side options. You could also deep fry morel mushrooms while you have the fryer out. Those would make a great addition to this meal.
How do I make a crispy turkey salad?
- Deep fry the wild turkey breast chunks.
- Lay the fried turkey chunks out on the plate or 9×13 dish that has paper towels in it.
- Put them on a cutting board and chop them into tiny pieces.
- Cut 5-9 baby tomatoes in half.
- Chop ½ head of iceberg lettuce into pieces.
- Dice up a red pepper.
- Mix up homemade ranch dressing. In a glass jar with a lid, mix together 1 cup milk, ½ cup mayonnaise, 1 tablespoon dill (dried or fresh), 1 tablespoon fresh lemon juice, salt, and pepper. Put the lid on the jar and shake until well blended. This can keep in the fridge for about 5 days.
- Layer the salad, pepper, tomatoes, fried turkey pieces, and then drizzle the top with ranch dressing.
What fryer do you use to fry wild turkey in?
I have a very old “Fry Daddy” that I have used for years. I like it because you don’t have to program it. You literally just plug it in and it heats up the oil to the right temperature. You could use a large cast iron or regular skillet as well. I prefer the “Fry Daddy” because the oil doesn’t splash out and it heats up to the perfect temperature. Don’t let it stop you from making these if you don’t have one though. You can make it work with a skillet.
Where do you fry wild turkey breast chunks?
After years of stinking up our house with that fried smell that doesn’t seem to go away, we take the time to set up in the garage or outside. We just set up a small table and run an extension cord to the “Fry Daddy” plug in if it is too far away from the wall outlet. We set up our table just outside of or at the edge of the garage.
How long does it take to fry wild turkey breast chunks?
It will take around 10 minutes to set up everything and get ready for frying. That is a good amount of time for the fryer to heat up. I like to set up the table, pour the oil in the fryer, plug it in, and then go get the rest ready to carry out to the frying area. Once you have everything ready, it will take around 5 minutes to dip them into the milk/egg mixture followed by the flour mixture, and then get them into the fryer. They are probably in the fryer for a good 6 minutes. They will be floating and turn a nice golden brown color when they are done.
