High Protein Southwest Cottage Cheese Bowl Recipe

My family is in love with this simple, healthy, and flavorful southwest cottage cheese bowl. It is perfect for a quick dinner or lunch. We have been trying to make sure we get plenty of protein in our diet and this recipe has been perfect for those protein goals. Currently, my boys aim for around 200 grams of protein a day, and I am striving for 80-100 grams a day. Let me show ya how to make this simple and delicious recipe.

High Protein Southwest Cottage Cheese Bowl Recipe

This recipe is light, flavorful, and full of whole and delicious ingredients. The grilled chicken, cottage cheese, tomatoes, corn, and black beans come together beautifully in this recipe. Plus, it helps us to reach our protein goal!
Prep Time 20 minutes
Layering the Layers 10 minutes
Course: Main Course

Ingredients
  

  • 3-4 lbs. grilled chicken breast (cut into bite sized pieces)
  • 2 16 oz. tubs of Good Culture Cottage Cheese 2%
  • 2 cans drained and rinsed black beans
  • 2 small cans shoepeg corn, drained
  • cups sliced fresh cherry tomatoes
  • chipolte dressing (optional)
  • fresh cilantro

Method
 

  1. Grill the chicken and cut it into bite sized pieces. Season it with your favorite southwestern seasoning. Taco seasoning works just fine. You can even use left over grilled chicken, or rotisserie chicken in this recipe.
  2. In a large salad bowl or 9 x 13 dish, assemble the ingredients. Here is a suggested order, but it'll turn out just fine however you do it.
  3. Spread out the cottage cheese as the base and salt and pepper it.
  4. Layer on the grilled chicken.
  5. Layer on the black beans.
  6. Layer on the corn.
  7. Layer on the fresh diced tomatoes.
  8. Layer on the dressing and cilantro.
