Grill the chicken and cut it into bite sized pieces. Season it with your favorite southwestern seasoning. Taco seasoning works just fine. You can even use left over grilled chicken, or rotisserie chicken in this recipe.
In a large salad bowl or 9 x 13 dish, assemble the ingredients. Here is a suggested order, but it'll turn out just fine however you do it.
Spread out the cottage cheese as the base and salt and pepper it.
Layer on the grilled chicken.
Layer on the black beans.
Layer on the corn.
Layer on the fresh diced tomatoes.
Layer on the dressing and cilantro.
