Why You’ll Love This Dill Chicken Salad Recipe

This is not your average chicken salad. The fresh dill and crunchy cucumbers take it up a notch. The red onion and bell pepper add color and flavor. You can make it with mayonnaise for a classic chicken salad recipe, or you can use plain Greek yogurt for a lighter twist. Both options work beautifully.

It’s a great way to use up extra cucumbers from the garden. It’s also perfect for meal prep. Make a big batch and you’ll have easy lunches ready all week. However, if you live in my house with three full grown men, it might last you a day! My boys and husband all love it! It’s a great way to get in the extra protein and it is so light and flavorful!

Ingredients You’ll Need

Here’s what you’ll need for the dressing:

  • 2 ¼ cups mayonnaise or 2 ¼ cups plain Greek yogurt
  • 3 tablespoons white wine vinegar (you could substitute pickle juice here)
  • 3 cloves garlic, minced
  • ¾ teaspoon salt
  • ¾ teaspoon black pepper
  • Fresh dill, to taste (start with 1 teaspoon if you’re not sure)

For the salad itself:

  • 6 cups cooked chicken breast, shredded or cubed (about 2 ½–3 pounds, or 7–8 chicken breasts). I like to cut mine up and then pull it apart with my hands for a better texture. You can use leftover rotisserie chicken and leftover cooked chicken for a shortcut.
  • 3 large cucumbers, diced
  • 1 ½ cups red bell pepper, finely diced (any bell pepper works if you don’t have red)
  • ¾ cup red onion, finely diced

Optional mix-ins: green onions, crunchy celery, or a squeeze of lemon juice.

How to Make Dill Cucumber Chicken Salad

  1. In a large mixing bowl, stir together the mayo or Greek yogurt, vinegar, garlic, salt, pepper, and dill.
  2. Add the cucumbers, onion, and bell pepper to the dressing. Mix well.
  3. Add in the chicken and stir until everything is coated.
  4. Cover and place in an airtight container. Chill in the fridge until ready to serve.

That’s it. You’ve got a delicious chicken salad full of fresh flavors.

Serving Ideas for Chicken and Dill Cucumber Salad

This chicken and cucumber salad is so versatile. Here are some of my favorite ways to serve it:

  • On sourdough bread, a croissant, or your favorite bread
  • Wrapped in butter lettuce (little lettuce cups) or romaine leaves for delicious lettuce wraps
  • With Triscuits, Wasa crackers, or sourdough crackers
  • With potato chips for a fun crunch
  • On top of a big green salad is another great option
  • With sliced cucumbers as “chips” for a fresh and healthy option

This creamy chicken salad also makes a great picnic food. Just keep it chilled in an airtight container or a large bowl until you’re ready to eat. It’s a great addition to any pitch-in meal.

Tips and Variations for this Simple Recipe: Cucumber Chicken Salad

  • Use rotisserie chicken if you don’t want to cook chicken breasts. Dice it up and you’re ready to go. Now you have a cucumber rotisserie chicken salad with dill.
  • Swap in your favorite bell peppers for different flavors. This is an easy way to add in your favorites.
  • Add crunchy celery for extra texture.
  • Sprinkle in a dash of garlic powder for a flavor boost.
  • Top with green onions or lemon slices before serving.

Why This Is a Good Chicken Salad

This chicken cucumber mayo salad checks all the boxes. It’s creamy. It’s crunchy. It’s fresh. It’s easy. It’s an easy chicken salad that is perfect for hot summer days.

It’s also flexible. You can make it with mayo for a rich, classic flavor, or go with a Greek yogurt chicken salad for a healthy chicken salad twist. Either way, it’s delicious.

This is one of my husband’s and boys’ favorite recipes. When I make a big batch, it never lasts long.

    1. Thank you Beth! Glad you liked it. Did you go with the Mayo or the Greek yogurt? I made it again yesterday and used the Mayo. We are down to just a few cucumbers so I’m savoring every bite.
