Strawberry-Chocolate Chunk Skillet Cookie

You have to try this strawberry Chocolate Chunk skillet Cookie. It has the perfect mix of gooey chocolate and bursts of sweet strawberries in every bite. Bake it in a skillet for those crispy edges and soft center, and trust me, it's a dessert you'll be loving!

Ingredients
  

  • 6 tbsp butter, softened
  • 1 cup firmly packed brown sugar
  • ¼ cup white granulated sugar
  • 1 large egg
  • tsp. vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup plus 1 tablespoon old fashioned oats (divided)
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 cup fresh strawberries (chopped)
  • ½ cup dark chocolate chunks

Equipment

  • Measuring Cups and Spoons:
  • large mixing bowl
  • medium bowl
  • 10-inch cast iron skillet

Method
 

  1. Preheat your oven to 350°.
  2. Spray a 10-inch cast iron skillet with cooking spray.

  3. In a large bowl, mix together the 6 tablespoons of softened butter, 1 cup packed brown sugar, and ¼ cup white sugar until light and fluffy.

  4. Add in 1 egg and mix well.

  5. Mix in 2 ½ tsp. vanilla extract.

  6. In a medium bowl, whisk together 1 ½ cups all-purpose flour, ½ cup oats, 1 tsp. baking soda, ½ tsp. baking powder, and ½ tsp. salt.

  7. Gradually add this to the creamed mixture. Don't turn the mixer on too high at first or you'll be wearing the flour. Don't ask how I know this. Mix until just combined.

  8. Stir in the strawberries and dark chocolate chunks. You can break up a candy bar to get the chunks.
  9. Press the dough into your cast-iron skillet.
  10. Sprinkle the remaining 1 tablespoon of oats over the top.
  11. Bake for 25-30 minutes, until golden brown.
  12. Serve with Strawberry, chocolate, or vanilla ice cream. Better yet, all three!
