Preheat your oven to 350°.
Spray a 10-inch cast iron skillet with cooking spray.
In a large bowl, mix together the 6 tablespoons of softened butter, 1 cup packed brown sugar, and ¼ cup white sugar until light and fluffy.
Add in 1 egg and mix well.
Mix in 2 ½ tsp. vanilla extract.
In a medium bowl, whisk together 1 ½ cups all-purpose flour, ½ cup oats, 1 tsp. baking soda, ½ tsp. baking powder, and ½ tsp. salt.
Gradually add this to the creamed mixture. Don't turn the mixer on too high at first or you'll be wearing the flour. Don't ask how I know this. Mix until just combined.
Stir in the strawberries and dark chocolate chunks. You can break up a candy bar to get the chunks.
Press the dough into your cast-iron skillet.
Sprinkle the remaining 1 tablespoon of oats over the top.
Bake for 25-30 minutes, until golden brown.
Serve with Strawberry, chocolate, or vanilla ice cream. Better yet, all three!
