Sourdough Discard Crackers with Parmesan Cheese

Sourdough discard crackers with Parmesan cheese are one of my favorite snacks to make when I have extra starter. They’re crunchy, salty, cheesy, and a great way to use up discard without wasting it. Plus, they’re only five ingredients. That’s my kind of recipe.

Ingredients
  

  • 1 cup sourdough discard (active starter can be substituted)
  • 3 tbsp. olive oil (avocado oil or melted butter can be substituted)
  • cup shredded Parmesan cheese
  • ½ tsp. salt
  • tsp. Italian seasoning (or seasoning of choice)

Method
 

  1. Preheat your oven to 350°.
  2. Line a large baking sheet with parchment paper.
  3. Combine the discard, olive oil, Parmesan cheese, salt, and seasoning in a medium sized bowl.
  4. Pour the cracker batter over the parchment paper and spread it out close to the edge. I use a small spatula to spread it out. It won't be perfectly even, so just do your best.
  5. Bake it for 15 minutes and then take it out and cut it into squares using a pizza cutter.
  6. Put it back into the oven for 20-25 minutes or until golden brown. I sometimes rotate my pan half-way through to help the cook evenly.
  7. Let them cool for at least 10 minutes and then break them apart. Enjoy!
