Simple Venison Jalapeno Potato Protein Bowls

These venison jalapeno potato protein bowls are perfect for dinner, lunch, and meal prepping. We love them! You can substitute 96/4 ground beef in place of the venison.

Ingredients
  

  • 3 lbs. ground venison or 96/4 lean ground beef
  • 8 Idaho potatoes, diced (medium sized potatoes)
  • 6 crowns of fresh broccoli
  • 3 taco seasoning packets
  • ½ tsp. salt (for potatoes)
  • ½ tsp. pepper (for potatoes)
  • 4 tbsp. olive oil (for potatoes)
Jalapeno Protein Sauce
  • 8 oz. bag of 2% sharp cheddar cheese
  • 1 cup plain Greek yogurt
  • 10 pieces of jalapenos
  • 1 tbsp. jalapeno juice
  • ¾ cup milk
  • ½ tsp. pepper (add more to taste)
  • ½ tsp. salt (add more to taste)

Equipment

Method
 

  1. In a large pan, brown your venison and season with the 3 taco seasoning packets.
Roasted Potatoes
  1. Dice up 8-9 medium potatoes into 1 in. by 1 in. size or smaller.
  2. Put the potatoes on a large cooking sheet with a lip.
  3. Drizzle 3 -4 tablespoons of olive oil over the potatoes and season with salt and pepper. About ½ tsp. of each.
  4. Bake the potatoes at 400° for 35 minutes.
Steamed Broccoli
  1. Steam the broccoli according to the package directions (if using frozen) or, if you have fresh broccoli, steam for 7 minutes in a pan or in a microwave safe steamer.
Protein Jalapeno Sauce
  1. In a blender, combine the sharp cheddar cheese, plain Greek yogurt, jalapenos pieces, jalapeno juice, milk, and seasoning. Blend until smooth.

  1. Combine the browned venison, roasted potatoes, steamed broccoli, and protein sauce. Mix until combined.
  2. Separate them into 8 bowl to get 50 g. of protein per bowl. If that serving size is too big, make smaller serving sizes. Enjoy!
