Prepare the Dough
- Mix together the flour, baking soda, salt, baking powder, and cocoa. Add in the sourdough discard, water, buttermilk, melted butter, honey, and red gel food coloring.

Knead the Dough
- Transfer the dough onto a lightly floured surface. Knead the dough 4-5 times. The dough shouldn't be sticky. If it feels sticky, sprinkle a bit more flour as needed.

Cinnamon Sugar Filling
- In a separate bowl, combine the brown sugar, cinnamon, and butter.

Roll and Assemble
- Transfer it to a floured surface and roll it out into a rectangle about 1/4 inch thick.

- Spread the softened filling evenly over the rolled-out dough.

- Starting from the long edge, tightly roll the dough into a log. Pinch the seams to seal.
- Cut the rolls with a sharp knife or dental floss. Place the cut rolls into a greased baking dish, leaving a little space between each roll for them to expand a little.
Bake the Rolls
- Preheat the oven to 375°.
- Bake for 18-20 minutes.

- Cool slightly.
Prepare the Icing
- While the rolls are baking, prepare the icing.

- Use a mixer to blend together the butter, cream cheese, vanilla, and powdered sugar. Mix until smooth.

- Spread the icing over the slightly cooled rolls and enjoy!
