Red Velvet Cinnamon Rolls: Sourdough Discard Recipe

These Red Velvet Cinnamon Rolls are made with sourdough discard for a tangy twist, giving them a soft, irresistible texture. The rich red velvet flavor and cream cheese frosting make them the perfect treat for any occasion!

Ingredients
  

Roll Ingredients
  • 4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 ½ tsp. salt
  • 2 tsp. baking powder
  • 1 tbsp. cocoa powder
  • 1 cup sourdough discard
  • 1/2 cup water
  • 1/2 cup buttermilk
  • 1/2 cup butter, melted
  • ¼ cup honey
  • 2 tsps. red gel food coloring
Cinnamon Roll Filling
  • 1 stick butter, softened
  • 1 cup packed brown sugar
  • 1 tbsp. ground cinnamon
Cream Cheese Icing
  • 1/2 cup butter, softened (1 stick)
  • 8 oz. cream cheese, softened
  • 1 tsp. vanilla extract
  • 4 cups powdered sugar
  • 1/2 tsp. salt (optional)

Equipment

Method
 

Prepare the Dough
  1. Mix together the flour, baking soda, salt, baking powder, and cocoa. Add in the sourdough discard, water, buttermilk, melted butter, honey, and red gel food coloring.

Knead the Dough
  1. Transfer the dough onto a lightly floured surface. Knead the dough 4-5 times. The dough shouldn't be sticky. If it feels sticky, sprinkle a bit more flour as needed.

Cinnamon Sugar Filling
  1. In a separate bowl, combine the brown sugar, cinnamon, and butter.

Roll and Assemble
  1. Transfer it to a floured surface and roll it out into a rectangle about 1/4 inch thick.

  2. Spread the softened filling evenly over the rolled-out dough.

  3. Starting from the long edge, tightly roll the dough into a log. Pinch the seams to seal.
  4. Cut the rolls with a sharp knife or dental floss. Place the cut rolls into a greased baking dish, leaving a little space between each roll for them to expand a little.
Bake the Rolls
  1. Preheat the oven to 375°.
  2. Bake for 18-20 minutes.

  3. Cool slightly.
Prepare the Icing
  1. While the rolls are baking, prepare the icing.

  2. Use a mixer to blend together the butter, cream cheese, vanilla, and powdered sugar. Mix until smooth.
