Ground Turkey Sweet Potato Skillet

This healthy and flavorful skillet dinner is one of my personal favorites. It is healthy, delicious, and quick to make. I love the ground turkey combined with the sweet potatoes! So good!!

Ingredients
  

  • 2 lbs. lean ground turkey (wild or from the store)
  • 2 tsp. crushed garlic
  • 1 large diced yellow onion
  • 1 diced red bell pepper
  • 3 peeled and diced medium sized sweet potatoes (about 3 cups worth)
  • 1 tsp. salt
  • 1 tsp. pepper
  • ½ tsp. red pepper flakes
  • hot honey to drizzle over the top
  • 1 cup freshly shredded cheddar cheese
  • 2 tbsp. olive oil, butter, or beef tallow for browning the ground turkey in

Method
 

  1. In a cast iron skillet, heat the oil over medium-high heat.
  2. Add in the lean ground turkey, garlic, onion, and pepper. Cook until the turkey is browned. This will take about 10 minutes or so.
  3. Add in the diced sweet potatoes, salt, pepper, and red pepper flakes.
  4. Cover the skillet and continue to cook until the sweet potato is soft. This will take about 15-20 minutes. Stir occasionally.
  5. Preheat the oven to 400°.
  6. When the sweet potatoes are soft, sprinkle on the cheese and pop the uncovered skillet into the oven for 2-5 minutes. You just want to the cheese to melt, so keep an eye on it. Like...don't walk away.
  7. Take it out of the oven and enjoy! I think the beef tallow gives it a great flavor but any of the oils will work.
