Method
- Separate the egg whites from the egg yolks.
- Mash the egg yolks up in a small bowl.
- Chop up the egg whites.
- In a medium saucepan, add butter or grease drippings and heat over medium heat.
- Whisk in the flour.
- Slowly pour in the milk until the desired consistency. SLOWLY is the key.
- Continue to stir and heat until thickened.
- Stir in the egg whites and salt and pepper.
- Spoon it over toast or biscuits.
- Sprinkle mashed eggs yolks over each serving.
