Goldenrod Eggs with Butter

Prep Time 25 minutes
Course: Breakfast, Main Course

Ingredients
  

  • 5 hard-boiled eggs (peeled and cut in half)
  • 6 tbsp. butter or grease drippings
  • 6 tbsp. all-purpose flour
  • cup milk (I prefer 2% or whole milk)
  • salt and pepper to taste

Method
 

  1. Separate the egg whites from the egg yolks.
  2. Mash the egg yolks up in a small bowl.
  3. Chop up the egg whites.
  4. In a medium saucepan, add butter or grease drippings and heat over medium heat.
  5. Whisk in the flour.
  6. Slowly pour in the milk until the desired consistency. SLOWLY is the key.
  7. Continue to stir and heat until thickened.
  8. Stir in the egg whites and salt and pepper.
  9. Spoon it over toast or biscuits.
  10. Sprinkle mashed eggs yolks over each serving.
