Four Ingredient Pumpkin Cookies: Chewy and Easy!

There are so many delicious pumpkin desserts out there. These four ingredient pumpkins cookies are made with a spice cake mix, pumpkin pie spice, vegetable oil (canola is fine), and two large eggs. This may be the easiest pumpkin cookie recipe out there.

Ingredients
  

  • 1 box Spice Cake Mix. I used (Duncan Hines Perfectly Moist Spice Cake)
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tbsp pumpkin pie spice

Method
 

  1. Preheat the Oven: Set your oven to 350 degrees to preheat while you prepare the cookie dough.
  2. Mix Ingredients: In a large bowl, combine the spice cake mix, ½ cup vegetable oil, 2 large eggs, and 1 tablespoon pumpkin pie spice. Stir until mixed well. The batter will be thick.
  3. Scoop the Dough: Using a spoon or a cookie scoop, drop spoonfuls of dough balls onto a baking sheet. You can line it with parchment paper if you like. Space them about 2 inches apart.
  4. Bake the Cookies: Place the baking sheet in the preheated oven and bake for 8-9 minutes until the cookies are set.
  5. Cool and Enjoy: Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely. Enjoy your delicious pumpkin cookies!

Notes

Add-Ins:
  • Nuts: Add chopped walnuts, pecans, or almonds for some crunch.
  • Dried Fruits: Mix in raisins or dried cranberries for a chewy texture.
  • White Chocolate Chips: Swap out or add in white chocolate chips for a different flavor. Use chocolate chips during this fall season and turn this recipe into pumpkin chocolate chip cookies.
  • Butterscotch Chips: These add a caramel-like sweetness that goes well with the pumpkin.
Toppings: 
  • Cream Cheese Frosting: Frost the cookies with homemade or store-bought cream cheese frosting for a little something extra. 
  • Cinnamon Sugar: Sprinkle a mix of cinnamon and sugar on top of the cookies before baking for a sweet topping.
  • Glaze: Drizzle a simple glaze made of powdered sugar and milk or a spiced glaze with cinnamon and vanilla over the cooled cookies.
