Delicious Sourdough Cranberry Cake with Rich Butter Sauce

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/4 tsp. salt
  • 1/2 tsp. almond extract
  • 2 cups fresh cranberries
  • 1/2 cup sourdough discard
  • 1/2 cup butter (melted)
  • 2 eggs (beaten)
Butter Sauce
  • 1/2 cup butter
  • 1 cup white granulated sugar
  • 1/2 cup evaporated milk

Equipment

  • measuring spoons and cups
  • large mixing bowl
  • small sauce pan
  • serving container for butter sauce (Optional: sauceboat)
  • 9 in. pan (round or square)

Method
 

  1. Preheat oven to 350°.

  2. Grease a 9 inch baking dish. You can use a 9 x 9 baking dish, a 9 inch pie pan, or a small casserole style dish.

  3. In a large mixing bowl, mix together 1 cup flour, 1 cup sugar, and 1/4 tsp. salt.

  4. Add in the fresh cranberries and toss to coat. (nothing major)

  5. Mix in 1/2 tsp. almond extract, 1/2 cup melted butter, 1/2 cup sourdough discard, and 2 beaten eggs. Stir until combined.

  6. Spread batter into a greased 9 inch baking dish.
  7. Bake for 30-35 minutes.

Butter Sauce
  1. In a small saucepan over medium heat, combine 1/2 cup butter, 1 cup sugar, and 1/2 cup evaporated milk. Heat over low to medium heat until the sugar is melted and the mixture is smooth and well blended. It takes about 5-7 minutes for it to start thickening. It will thicken as it sits out as well.
