Copycat Crumbl Strawberry Pretzel Pie Recipe

A sweet and salty treat inspired by the iconic Crumbl cookie! These Copycat Crumbl Strawberry Pretzel Pie Cookies feature a buttery pretzel cookie base, a creamy cream cheese middle, and a sweet strawberry glaze on top.

Ingredients
  

Cookie Base (remember, you can incorporate the pretzel butter mixture into a store bought cookie dough for a short cut method)
  • ½ cup butter, softened
  • ¼ cup butter, melted
  • ½ cup white, brown, or coconut sugar
  • 1 tsp. vanilla
  • 1 egg, room temperature
  • 2⅓ cups all-purpose flour
  • ¼ tsp. cream of tartar
  • ½ tsp. salt
  • 1 tsp. baking powder
Pretzel Mixture to Mix Into Cookie Dough
  • ¾ cup crushed pretzels
  • 3 tbsp. melted butter
Strawberry Topping: Option 1 (in no particular order)
  • favorite store-bought or homemade strawberry jam
Strawberry Topping: Option 2 (My preferred method)
  • 1 bag or container of Strawberry glaze (found near the strawberries)
  • ½ cup white granulated sugar
  • diced fresh strawberries (just add as many as you want)
Strawberry Topping: Option 3
  • 1 cup frozen strawberries
  • cup water
  • tbsp. sugar
  • tbsp. unflavored gelatin
Whipped Topping: Option 1 (in no particular order)
  • Cool Whip
Whipped Topping: Option 2
  • 1 tub store-bought whipped cream cheese icing
Whipped Topping: Option 3 (my preferred method)
  • ½ cup heavy whipping cream
  • of the 8 oz. block of cream cheese, softened
  • cup powdered sugar
  • 1 tsp. vanilla extract

  • hand held or stand mixer
  • Measuring Cups and Spoons:

Method
 

Cookie Base
  1. Preheat your oven to 350°.
  2. Use a mixer to beat ½ cup softened butter, ¼ cup melted butter, ½ cup of sugar, and 1 tsp. vanilla for 3 minutes.

  3. Add in the room temperature egg and beat for 2 minutes.

  4. In a separate bowl, mix together 2 ⅓ cup all-purpose flour, ¼ tsp. cream of tartar, ½ tsp. salt, and 1 tsp. baking powder.

  5. Add that gradually to the wet mixture on low speed on only mix until combined.

  6. Melt 3 tablespoons of butter, crush ¾ cup worth of pretzels, and mix them together.

  7. Add the butter & pretzel combination to the dough and incorporate.

  8. Use a ⅓ cup cookie scoop to portion out the dough, roll it into a ball, flatten the dough and pinch or press it down so that the sides come up to look like a mini pie. It will be like a boat so that it can hold the cream cheese icing and strawberry topping.

  9. Bake for 8 minutes on a cookie sheet lined with parchment paper. Don't over-bake.

  10. Let them cool for 5 minutes on the pan. They will continue to cook and set up during this time. Let the cookies cool completely.

Strawberry Filling: Homemade
  1. Combine 1 cup of frozen strawberries, ⅓ cup water, and 1 ½ tbsp. sugar in a medium saucepan.
  2. Cook over medium heat until the strawberries start to soften. Mash them with a spoon or meat chopper.
  3. Pour in the 1½ tbsp. unflavored gelatin and turn up the heat to medium-high. Use a whisk to stir and get the lumps out the best you can.
  4. Bring this to a boil and continue to stir until the gelatin is dissolved.
  5. Boil for 1 additional minute and then remove from heat.
Strawberry Filling: Semi-Homemade & My Preferred Method
  1. Mix one container of strawberry glaze (found by the strawberries at the grocery) with 1/2 cup white granulated sugar. Mix until sugar dissolves.

  2. Add in ½ cup to 1 cup of diced strawberries. Stir gently.
Strawberry Filling: Quickest Method
  1. Get out your jar of strawberry topping or jam.
Whipped Cream Cheese Topping: Homemade
  1. Use your mixer to beat ½ cup of heavy cream.for 5 minutes, or until stiff peaks form. Put into a separate bowl and set to the side.

  2. Use you mixer to mix together 1/3 of the 8 oz. block of softened cream cheese, ⅓ cup powdered sugar, and 1 tsp. vanilla extract. Mix for 3 minutes.

  3. Add in the mixed cream and mix for 1 minutes or until combined well. We don't want it to go completely flat by over mixing.
Whipped Cream Cheese Topping: Not Homemade
  1. Get out your container of store-bought icing.
Time for the Masterpiece
  1. If the cookies are cooled, spread a layer of the whipped cream cheese topping over each one. Don't go over the raised sides.

  2. Spread the strawberry topping on top of that. Again, don't go over the raised sides. You don't even have to cover all of the whipped cream cheese frosting.

  3. Top it with a pretzel or sprinkle crushed pretzels over the top and serve.

  4. Store in an air-tight container in the fridge.
