Classic Chopped Italian Salad with Deer Salami

I love a good, hearty salad and this chopped Italian salad with deer salami in it is packed with flavor, easy to throw together, and might just become your new favorite! Let's dig in.

Ingredients
  

Italian Vinaigrette Dressing (or, just get the one you want from the store)
  • 1 lemon, juiced
  • 2 tbsp. red wine vinegar
  • 1 tbsp. Dijon mustard
  • 2 tsp. sugar (helps to simmer down the strong vinegar taste)
  • 1 tsp. dried oregano (or Italian seasoning blend)
  • ½ cup olive oil
  • ¼ tsp. salt (more to taste)
  • ¼ tsp. pepper (more to taste)
Salad Ingredients
  • 2-3 heads of romaine lettuce, chopped
  • ½ red onion, diced
  • 1 15 oz. can chickpeas, drained and rinsed
  • 1 pt. cherry tomatoes, halved
  • deer salami, chopped (just eyeball how much you want on there, we like a lot)
  • 8 oz. fresh mozzarella, sliced
  • ½ cup pepperoncini peppers, sliced
  • ¼ cup roasted red peppers, sliced
  • basil leaves, chopped (just as many as you want)

Equipment

  • knife & cutting board
  • large salad bowl

Method
 

Italian Vinaigrette Dressing (or, just get the one you want from the store)
  1. Use a jar with a lid for this. A mason jar works great. Mix together the juice from 1 lemon (no seeds, please), 1 tbsp. Dijon mustard, 2 tbsp. red wine vinegar, 2 tsp. sugar, 1 tsp. dried oregano, ½ cup olive oil, ¼ tsp. salt and ¼ tsp. pepper. Give it a super good shake. Bam! Homemade dressing!

The Salad
  1. Add the chopped Romaine lettuce, ½ chopped red onion, drained and rinsed chickpeas, halved cherry tomatoes, chopped deer salami (best part), chopped mozzarella, ½ cup sliced pepperoncinis, ¼ cup sliced roasted red peppers, and chopped fresh basil leaves to a large bowl.

  2. You can either drizzle the dressing on the salad or leave it on the side. We leave it on the side. It's up to you though.
