Brunswick Stew

This Brunswick Stew recipe features a delicious BBQ base, a mix of pulled chicken and pork, baby Lima beans, and corn, all simmered together for a hearty and flavorful dish. It's an easy one-pot meal perfect for cozy family dinners or gatherings.

Ingredients
  

  • 4 tbsp. butter
  • 1 large diced onion
  • tsp. minced garlic
  • tbsp. Worcestershire sauce
  • 2 tsp. salt
  • 1 tsp. black pepper
  • ¼ tsp. ground red pepper
  • 1 tsp. paprika
  • ½ lb. smoked pulled chicken (chopped)
  • ½ lb. smoked pulled pork (chopped)
  • 1 cup BBQ Sacue
  • ½ cup mustard style BBQ sauce
  • 1 can crushed or diced tomatoes
  • 2 cups chicken stock
  • 1 cup frozen baby Lima beans, frozen or thawed
  • 1 cup frozen corn, frozen or thawed
  • 1 cup chopped tomato

  • large pan (Dutch oven, cast-iron pot, large soup pan)

Method
 

  1. In a large soup pan, melt butter over medium-high heat and add the diced onion. Stir until soft, about 10-15 minutes.
  2. Add in garlic and cook for 2 minutes.
  3. Stir in salt, both peppers, and Worcestershire. Reduce the heat to medium and continue to stir frequently for 5 minutes.
  4. Add the pulled chicken and pork, BBQ sauces, and cook for 5 more minutes. Stir often.
  5. Add the canned and fresh tomatoes, chicken stock, corn, lima beans, and paprika.
  6. Bring this to a boil over medium heat. Stir occasionally.
  7. Reduce heat to medium-low and simmer for 1 hour. Stir occasionally. Enjoy!
Crock Pot Directions
  1. Add all ingredients to your crock pot and cook on low for 6-8 hours or on high for 4-5 hours. Serve with cornbread and enjoy!
