Method
- Put the chicken in a roasting pan. You don't have to grease it.
- Place the potatoes and garlic around the chicken.
- Season with salt and pepper.
- Drizzle the olive oil over the top.
- Bake for 425° for 20 minutes. (uncovered)
- Reduce the oven temp to 375° and bake for about 45-50 minutes more. Juices should run clear and the chicken will be a golden color.
