Ingredients
  

  • ¾ cup white granulated sugar
  • cup flour
  • ¼ tsp. salt
  • 2 cups milk (2% or whole)
  • 1 tsp. vanilla extract
  • 1 tbsp. butter
  • 3 egg yolks, beaten

Method
 

  1. In a large, microwave safe bowl, combine the ¾ cup sugar, ⅓ cup flour, and ¼ tsp. salt.
  2. Slowly add the milk while whisking it the entire time.
  3. Cook in the microwave for two minutes, take it out and whisk it together really well.
  4. You will continue cooking it for 2 minute intervals until thickened. Cook, stir well, repeat.
    This could take 6-10 minutes depending on your microwave. The original recipe says that it could take 10 minutes or longer. My microwave cooks high, so it goes a bit faster for me.
  5. Whisk the eggs in a smaller separate bowl. Pour a little bit of the hot pudding into the yolks and mix well. This will keep them from curdling in the pudding.
  6. Add that mixture back to the rest of the pudding, put it back into the microwave, and cook until thick, again by heating it for 1-2 minute intervals. Check it and whisk it well every 1-2 minutes until thick.
  7. Take it out of the microwave and stir in the tablespoon of butter and the vanilla extract.
  8. Serve warm and enjoy!
