Vanilla Pudding with Fresh Milled Flour

This warm pudding recipe is creamy, flavorful, and cozy. It only contains seven ingredients and is simple to make.
Prep Time 5 minutes
Cook Time 10 minutes
Course: Dessert

Ingredients

  • ¾ cup white granulated sugar
  • cup freshly milled flour (red winter wheat is what I used for this batch)
  • ¼ tsp. salt
  • 2 cups 2% or whole milk
  • 1 tsp. vanilla extract
  • 1 tbsp. butter
  • 3 egg yolks, beaten

Equipment

  • microwave safe bowl
  • grain mill

Method

  1. Mill the grain of your choice. I used red winter wheat for this batch.
  2. In a large, microwave safe bowl, combine the ¾ cup sugar, ⅓ cup freshly milled flour, and ¼ tsp. salt.
  3. Slowly add the milk while whisking it the entire time.
  4. Cook in the microwave for two minutes, take it out and whisk it together really well.
  5. You will continue cooking it for 2 minute intervals until thickened. Cook, stir well, repeat.
This could take 6-10 minutes depending on your microwave. The original recipe says that it could take 10 minutes or longer. My microwave cooks high, so it goes a bit faster for me.
  6. Whisk the eggs in a smaller separate bowl. Pour a little bit of the hot pudding into the yolks and mix well. This will keep them from curdling in the pudding.
  7. Add that mixture back to the rest of the pudding, put it back into the microwave, and cook until thick, again by heating it for 1-2 minute intervals. Check it and whisk it well every 1-2 minutes until thick.
  8. Take it out of the microwave and stir in the tablespoon of butter and the vanilla extract.
  9. Serve warm and enjoy!

This is my friend’s grandma’s homemade recipe, and she was kind enough to share it with me. From the very first bite, I understood why it’s been passed down. There’s just nothing like homemade pudding made from scratch—especially when it’s served warm. I was very excited to try this recipe with freshly milled flour.

Why You’ll Love This Warm Homemade Pudding

This pudding checks all the boxes:

  • Warm and cozy
  • Creamy and smooth
  • Made with pantry staples
  • Ready in under 15 minutes
  • No stovetop required (unless you want to)

It’s the kind of dessert you can throw together on a whim, yet it tastes like something you stood over all afternoon. Win, win!

Ingredients for Homemade Pudding Made From Scratch

Here’s everything you’ll need to make this warm pudding from scratch:

  • ¾ cup white granulated sugar
  • ⅓ cup freshly milled flour
  • ¼ teaspoon salt
  • 2 cups milk (2% or whole both work beautifully)
  • 3 egg yolks, beaten
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Simple ingredients. No fillers. No shortcuts. Just real, old-fashioned goodness.

How to Make Warm Pudding (Step by Step)

This recipe comes together easily, and the microwave does most of the work. Well, you do need to use a little elbow-grease for whisking too!

1. In a large microwave-safe bowl, combine the sugar, flour, and salt.

2. Slowly add the milk while whisking constantly. Keep whisking so everything stays smooth.

3. Cook the mixture in the microwave for 2 minutes. Carefully remove it and whisk really well.

4. Continue cooking in 2-minute intervals, whisking well each time, until the pudding thickens.

(Side note: this usually takes 6–10 minutes total, depending on your microwave. The original recipe says 10 minutes or longer. My microwave runs hot, so it goes a bit faster for me.)

5. While the pudding is hot, whisk the egg yolks in a separate smaller bowl. Slowly pour a little of the hot pudding into the yolks, whisking the whole time. This step keeps the eggs from curdling.

6. Pour the egg mixture back into the pudding. Return it to the microwave and cook for another 1–2 minutes at a time, whisking very well after each interval, until thick and creamy.

7. Remove from the microwave and stir in the butter and vanilla extract.

8. Serve warm—and enjoy every cozy bite.

Why This Homemade Warm Pudding Recipe Works So Well

This recipe works because it keeps things simple. The flour and egg yolks give the pudding structure and creaminess without making it heavy. The butter adds richness, the vanilla adds warmth, and the sugar balances everything out just right.

And because it’s homemade pudding made from scratch, you get a texture that’s truly hard to beat. It’s smooth, spoonable, and absolutely perfect when served warm.

A Little Note on Cozy Desserts and Family Recipes

There’s something special about recipes like this—especially ones shared from a grandma’s kitchen. They weren’t created to impress anyone. They were created to nourish, comfort, and bring people together.

This warm pudding does just that. It’s the kind of dessert you make for your family, your kids, or yourself at the end of a long day. No fuss. No stress. Just simple, homemade comfort.

And truly, there’s nothing quite like a homemade pudding—especially when it comes from a recipe passed
